I just read that besides Thanksgiving Day, Super Bowl Sunday is the biggest pig-out day of the year. I just don’t believe that it has to be exclusively junk that you are eating. So, if you are having people over, or going to a friends to watch the game, offer to bring a dish, and make it this healthier alternative. You won’t miss any flavor with this punchy dip. The vegetables are beautiful and fresh and the crispy, salty pita bread is better than chips anyways! Plus, if you stick to this starter, there is lots of room left to splurge on a brownie later!
Assorted crudités, such as:
-Carrot Sticks
-Celery Sticks
-Bell pepper strips
-Radishes
-Cucumber sticks
-Jicama, sugar snap peas, etc.
-Pita bread
-Olive oil
-Kosher salt
-Chili powder
1) Preheat the oven to 350 degrees.
2) Cut the pita rounds into 8 wedges each. Lightly brush the pita with olive oil and sprinkle with kosher salt and chili powder
White Bean Dip:
-2 cans white canellini beans
-1 lemon
-2 garlic cloves, minced
-2 Tbs olive oil
-kosher salt and freshly ground black pepper to taste
1) In a food processor, combine the garlic cloves, lemon juice, oil and beans. Puree until smooth, and then season to taste with salt and pepper. (If you want it spicy, you could add a tiny pinch of cayenne pepper.)
