How was your weekend guys? Mine was so great and the most relaxing I can remember in a long, long time.
We had major family time. Pete and I also took the little girls out to our anniversary dinner. We have just been traveling a lot so we had a slightly less romantic but still very love filled evening. They were adorable and very well behaved and I was very proud of them.
I had planned to spend all weekend gardening in my overgrown yard, but then it just rained and rained and rained. So I scrapped that and instead we have been total “bubbleheads” all weekend. (that is what my mom calls someone who watches too much tv). I managed to watch the entire season 2 of Game of Thrones to catch up to this 3rd season, which is where I started watching in the first place. Pete is just so happy that I won’t ask him a million questions during every episode now. I am SO obsessed, I can’t even handle it that they robbed us of a new episode last night.
Pete and I went to Great Gatsby last night. I liked it more than he did. The sets and costumes and music were amazing. I had forgoten how it ended. Yikes.
This morning I made these muffins for the girls and my mom who stopped by. I had lemons and blueberries and Pia requested muffins, so this is what I made. Pia ate 6 today, so I am going to assume they were a success…
And now to cap it off I am watching the sequal to last years “mock-u-mentary”? Mermaids the sequal… I am totally sold that there are mermaids, you?
And then, when my kiddo’s finally fall asleep its Behind the Candelabra- I can’t wait!! I’ll let you know what I think. XOXO
Recipe: Lemon Blueberry Streusal Muffins
Ingredients
- -1/2 cup butter, melted
- -1 ¼ cups sugar
- -2 eggs
- -2 Tablespoons fresh lemon juice
- -1 lemons zest, minced
- -2 ½ cups flour
- -2 ½ teaspoons baking powder
- -½ teaspoon salt
- -1 cup buttermilk
- -2 cups fresh blueberries
- Streusal:
- -1 cup flour
- -½ cup brown sugar
- -½ teaspoon salt
- -4 Tablespoons melted butter
- -1 lemons zest, minced
Instructions
- 1. Preheat the oven to 375 degrees and prepare 18 muffin tins with liners.
- 2. In a medium bowl, combine the butter, sugar, eggs, lemon juice and zest and whisk them together until smooth.
- 3. In another small bowl, combine the flour, baking powder and salt.
- 4. Stir in the dry ingredients into the batter half way and then add the buttermilk.
- 5. When the batter is smooth, fold in the blueberries.
- 6. Scoop the batter into the liners.
- 7. In a small bowl combine all of the streusal ingredients and stir them together until even with a fork.
- 8. Evenly distribute the streusal topping over the muffins.
- 9. Bake the muffins at 375 degrees for 15 minutes. Let cool and eat immediately or store in an airtight container.

I saw The Great Gatsby on Sunday too!! I LOVED it. The costumes, acting, and music was just amazing. I adore Leo & Carey Mulligan. *sigh* what a great love story. It’s so sad, though. I made lemon blueberry muffins on Saturday too – what are we, twins?! 😉 xo

Jason and I have been meaning to watch Gatsby but I kind of got turned off by the cast. When I imagine Gatsby, I think of George Clooney, not so much Leo.

Heather, I am CRAZY about Game of Thrones. As much as I am about Downton Abby. And I loved Gatsby. I cannot understand why the reviews were so bad. I would see it again anytime. BTW, the muffins look good too!

Weekend of Gluttony here on the Chesapeake … grilled oysters, steaks, ribs, sausages … the fellers behind the butcher counter **snicker** when they see me coming! Heather, I was going to make the raspberry oatmeal muffins from the cookbook but came on here to check if there was a blueberry muffin recipe since that is what I have. How do you do the buttermilk with a dairy allergy? Almond/cashew milk mixed with vinegar? or do you prefer to use some other type of milk?

Hi Jenn! I would have just swapped the blueberries for the raspberries in the book recipe- this is an archival recipe (from before we knew about the allergies).
But other wise we typically do a nondairy milk (unsweetened almond or coconut) plus a tablespoon of apple cider vinegar to create buttermilk.
