It is hard to find an old fashioned gingerbread these days, but I think that this recipe is really good. It is truly more of a bread than a cake, as there is no sugar. But it is still a dessert to me due to its spicy molasses flavored sweetness. I like to bake it like a cake, and top it with whipped cream and crystallized ginger, but you could also bake it in a loaf pan and serve it with coffee at breakfast.
Gingerbread
-1 large egg
-1/2 cup sugar
-1/2 cup dark molasses
-5 Tbs unsalted butter, melted
-2/3 cup whole milk
-1 1/2 cups AP flour
-1 tsp baking soda
-1/2 tsp salt
-1/4 tsp nutmeg
-1/4 tsp cloves
-2 tsp ginger
-2 tsp cinnamon
1) Preheat oven to 350 degrees. Prepare an 8″ square pan with non-stick spray.
2) In the bowl of a mixer, mix together the egg, sugar, molasses, butter and milk.
3) In a separate bowl, mix together the flour, baking soda, salt and spices. Add the dry ingredients to the batter, and mix until everything is well combined.
4) Pour the batter into the pan, and bake for about 30 minutes or until a toothpick comes out clean. Let the cake cool, and then slice and serve warm.
