I have a busy couple of weeks full of exciting stuff coming up on me (um, catch me tomorrow on New Day Northwest for Halloween Fun!!) and I am seriously looking into how to make things easier on me while still not feeling like I am cheating my family. I am obsessed with things like big pots of soup and one dish meals– anything to get everyone fed well without keeping me in the kitchen for too long.
And in that spirit, Mondays are made for Tacos. Chipotle Shrimp Tacos. They are so easy, delicious and fast to throw together and that is exactly what I need.
I love the spices and the intense flavor that these tacos have for so little effort on my part. Lazy? Um, yes. But that is the idea!
To make these Chipotle Shrimp Tacos, this is what you do:
For the Chipotle Lime Creama:
In a small bowl whisk together the sour cream, lime juice and chipotle chili powder. Season to taste with kosher salt. Refrigerate until ready to use.
For the Shrimp:
Rub the shrimp with the spice mixture and let marinate for 30 minutes.
Add the vegetable oil to a large non-stick pan and bring it to medium heat. Add the shrimp and cook until just opaque, about 3 minutes.
Heat the tortillas and add the shrimp, shredded cabbage and avocado. Squeeze the fresh lime over the top and serve with the pico de gaillo and Chipotle Lime Creama.
Recipe: Chipotle Shrimp Tacos
Ingredients
- Chipotle Lime Creama
- 1/3 cup sour cream

- finely shredded cabbage
- avocado
- lime
- pico de gaillo
Instructions

I love anything that is easy and tastes good and these tacos look like they would do just that. I love when shrimp is covered in spices. It just makes the flavor pop.

I generally love this blog, but I’ve got to say, these were insanely spicy–and we are Texans and love spice! Maybe our chipotle chili powder is more intense down here, but putting so much in the rub and then also in the crema even made my husband’s hair on fire, and he’ll happily much down food full of habaneros.
Also, a little confused that this is listed as six servings. Are you suggesting people eat just one taco with one or two shrimp inside? For dinner?
Hi Lauren- I think that there is a STRONG possibility that the chili powder you are getting down in Texas is FAR spicier than ours from the grocery store in Seattle, as these were not too spicy at all, and I have children who ate them. Our chipotle tends to be more smoky than spicy? So I’m sorry- I was not trying to hurt you!
I am happy to adjust the servings- I meant that there are 6 taco’s, when we had these with a ton of other dishes, people just took one.
Lauren, I completely agree. I get Thai-hot when I go out, and my mouth was on fire. Our chipotle powder was fresh; we buy everything as needed from the bulk department. I would honestly cut it back to 1/2 teaspoon at least, if not more. They also seemed a bit salty to me and I have a high salt pallet.
My hubby and I had two tacos each, with 5 shrimp in each.
The flavor profile is on point, the seasoning just needs to be dialed in.
Oh, and I’m in Seattle too 🙂
Just made this for my family – my parents aren’t generally huge fans of western food but it was a winner for everyone! Fresh and light but filling. So good! We don’t have chipotle chilli powder here in the UK so had to wing it with chipotle paste and chilli powder. Awesome!

Lidia- In the directions, you toss them with teaspoon chipotle chili powder
1 teaspoon chili powder and
1 teaspoon kosher salt. hope you enjoy!!
