For anyone that grew up in Seattle, or maybe anyone near a Nordstrom’s department store in the 80’s? this is the recipe for you! They used to sell these in the café at Nordstrom’s Department store when I was growing up and they were an absolute favorite of my mother and I. I randomly came across the recipe, (it tastes like the real thing), and I had to share it. This is just a good old fashioned bar cookie full of cheap thrills!
½ cup salted butter
1 12oz. package butterscotch chips
½ cup brown sugar
1 ½ cups flour
2 tsp baking powder, (combine in a bowl with the flour)
½ tsp vanilla
2 eggs, beaten
1 12oz package semi-sweet chocolate chips
2 cups miniature marshmallows
Preheat the oven to 350 degrees.
Melt the butter over medium heat in a medium sized saucepan. When the butter is melted, add the butterscotch chips and brown sugar until melted and well combined.
Remove the pan from the heat and stir in the flour and baking powder. Mix thoroughly and make sure that the mixture has a few minutes to cool. Stir in vanilla and eggs, taking care to stir quickly so the warm batter doesn’t cook the eggs at all.
Set the dough aside and let cool completely. When the dough is cool, stir in chocolate chips and marshmallows. Press the dough into a greased 9X13 baking pan.
Bake the bars for 20-25 minutes. Let them mostly cool before cutting into bars.
