Happy Day Before Thanksgiving!! If you still haven’t decided on a special cocktail to serve before dinner- here is s thought. Apple raspberry Pie Martini. This is just what the doctor ordered. For me anyways. A Cocktail that tastes like pie = happiness.
I added the raspberries because my mom used to make the most amazing apple and pear pies studded with raspberries, and I always loved that combination. You have the tart apple and the sweet raspberry, and both of them are evened out with alittle acid from a lemon. Combine all of that goodness with a cinnamon sugar rim and cold vodka, and well, you have pie flavored booze. It’s a good thing.
I know it’s a little frilly for every day drinking, but I think it would be so beautiful for a dinner party or even Thanksgiving . In the meantime- Happy Thanksgiving, enjoy ☺
Recipe: Apple Raspberry Pie Martini
Ingredients
- ¼ cup sugar
- ½ cup water
- 1 lemons juice
- 1 red delicious apple, cut into chunks, core removed
- 6 ounces vodka
- ¼ cup frozen raspberries
- 3 tablespoons sugar
- ½ teaspoon cinnamon
Instructions
- In a small pan, combine the sugar and the water and simmer for 3 minutes.
- In the jar of a blender, add the apple chunks. Pour the hot syrup over the top and add the lemon juice. Puree on high until pretty smooth. Set aside.
- Combine the sugar and cinnamon in a small dish. Rub the remaining lemon rind around the edge of the three glasses. Dip them into the cinnamon sugar and set aside.
- Strain the apple mixture into a cocktail shaker filled with ice. Add the vodka and frozen raspberries. Shake the cocktail vigorously (you want the raspberries to break up) and then strain into the prepared cocktail glasses.
- Serve chilled immediately.
