So yesterday was Coco’s 5th birthday. I spent some time crying because I can’t stop freaking out about how big she is getting and she can’t get big because she is my baby.

Then I got cooking. She wanted a “Family Taco Party” to follow up her “Friends Unicorn Themed Cooking Party” from this last weekend. The whole thing was pretty funny. Her gift highlights were a harmonica from my little brother and a flashlight from my mom. Of course.

Ok, on to the cocktails! Remember when I made this incredible vegan maple pecan ice cream last week? Well I made it into a cocktail. And a float. So it’s a cocktail ice cream float. I’m not sure that it gets better than that.

And besides doing all of those things, it is also a perfect combination of fall flavors. Pecans, maple, apple and bourbon. This is an awesome libation and dessert. It’s both! But I also made this for the kids (with no bourbon obviously, and they loved it to.)

 

Recipe: Bourbon Maple Pecan Apple Cider Float

Ingredients

  • 2 scoops Maple Pecan Ice Cream
  • 2 ounces bourbon
  • ½ cup sparkling apple cider, chilled
  • sprinkles are optional

Instructions

  1. Chill a tall glass and add the cream scoops to the glass. Pour the bourbon over the ice cream and then top with the apple cider and serve immediately. Add sprinkles if desired
