Are you getting your grilling on this weekend? It is basically all we do these days. I am soooo not into dishes right now. Or, err, ever. And grilling obviously gets rid of the worst kind of dishes- pots and pans. Plus, it’s totally delicious! You can’t achieve that smoky, charred taste any other way.

Grilled Nectarine Balsamic Chicken Skewers

So last weekend when we had a big party I used piles of stone fruit inplace of flower arrangements outside. They were really beautiful, but at the end, I have been left with a ton of fruit to use up. I knew I wanted to make a nectarine sauce for my grilled chicken skewers, but I needed some extra zing, and when I looked in my vinegar stash, the balsamic literally toppled out into my arms. I took that as a sign that I should use some in my marinade!

And turns out that sweet dark vinegar was the perfect compliment to the super sweet and tart nectarines. I also incorporated a lot of spicy red onion and grilled it with the chicken too.

These are awesome on a regular old work night or make an extra large batch for the 4th of July and serve it with Quinoa salad with zucchini and mint and a big green salad.

Recipe: Grilled Nectarine Balsamic Chicken

Ingredients

  • 1.5 pounds boneless skinless chicken breasts, cut into bite sized pieces
  • kosher salt
  • ½ red onion, cut into chunks
  • 2 tablespoons olive oil
  • Marinade
  • 1 nectarine, pitted and cut into chunks
  • 1/3 cup red onion, cut into chunks
  • ¼ cup balsamic vinegar

Instructions

  1. Skewer the chicken and red onion onto bamboo skewers and generously salt them.
  2. In the jar of a blender, puree the nectarine, red onion and balsamic until smooth. Pour the marinade over the chicken skewers and marinade up to 2 hours in the refrigerator.
  3. Preheat the grill to medium. Drizzle the skewers with olive oil and then grill over medium heat, turning often until the chicken is cooked through, about 10 minutes.
