Thirsty Thursday called to me this week to present probably the last of the summery cocktails and drinks. We have one last gorgeous weekend in the high 70’s and low 80’s and then all of the sudden it plunges to the low 60’s. It’s like Mother Nature is getting ready to announce “Summer is OVER!!!”
But until I pull out my sweaters and resign myself that all of my green garden tomatoes will never turn red, I will enjoy the last of the sunshine and all that it brings with it. That has to include raspberries.
Did I tell you that in my monstrosity of a garden this year that I planted new raspberry bushes? But not the unruly prickly scary kind that run a muck- but the new hybrid plants that have no thorns (!!!) and grow in a mound shaped bush. This makes for more practical raspberry growing and I am not scared to send my children to pick them and worry that they will come back bleeding.
And ripe fresh raspberries are incredible. They are so sweet and have such great color. They also happen to compliment some lovely flavors such as mint and lime …and rum.
I couldn’t help myself and had to make raspberry mojitos. The sweetness of the raspberries and the simple syrup that I use us cut with refreshing mint and tart lime
And all the flavors come together in an awesome combination. Happy Drinking!
Recipe: Raspberry Mojitos
Ingredients
- 1/2 cup raspberry puree
- 1/4 cup fresh mint leaves
- 1 lime, sliced in wedges
- 4 ounces white rum
- 4 ounces chilled club soda
- Raspberry Puree, makes 2 cups
- ½ cup raspberries
- 1 1/2 cups water
- 3/4 cup sugar
- pinch of kosher salt
- ice cubes
- mint leaves and fresh raspberries for garnish
Instructions
- For the Raspberry Puree:
- In a small pan, add the Raspberries, water, sugar and salt. Cook for 3-5 minutes until thickened. Add to the jar of a blender and puree until smooth. Chill. (You can strain the seeds if desired).
- For the Mojito:
- In the bottom of a heavy drinking glass, combine the mint and lime wedges, using a muddler to smash them all together and release some of the mint. Add ice cubes, the raspberry puree, rum and club soda and stir to combine. Serve immediately.
