I am a Seattle girl. If anyone hasn’t noticed in the last few years, that happens to mean that we have an epic football team. Our town is actually completely off their rocker for the Seahawks. We have 12th man mania. (Please no one bring up Sunday’s game either!)

And when you have a town that spends 6 months of the year totally obsessed with football you get some really good tailgating action. I know many, many people who sit around brainstorming and perfecting their tailgating recipes all week. I even know people who start collecting their recipes weeks before football season even starts. I’m not knocking that, because I have special chili recipes, the best braised pork and a whole arsenal of soups and stews that I know my family and friends love.

I can’t even go to my sister’s house for games because the two times we broke tradition and went there, the team lost. I’m not kidding. Everyone freaked out including us and we had to leave at half time so that I could watch the game from my usual chair at home- but it was just too late. So now my husband Pete and I have people over to our house on Sundays for the game (and I still watch it only from the same chair) and because I made chicken wings early in the season, I just kept making chicken wings, week after week. And I couldn’t NOT make chicken wings because would if then they lost?! It would have been all my fault for not just frying some wings… I couldn’t risk it. And FYI I am not crazy. So in the middle of all those months of chicken frying, I didn’t want to bore my same friends week after week, so I was really experimenting with all kinds of different flavors to spice things up and keep it interesting. Just so long as I kept making those chicken wings!! Well turns out that it must have worked! Seahawks killed it. Well as long as we gloss over that whole thing that happened at the Superbowl, right?

No, all silliness aside- all those chicken wings did become very popular and everyone would look forward to the crispy delicious recipe of the week.

Spicy Orange Chicken WIngs

This was one of the flavors that was super tasty and quite popular. The garlic and red pepper spice up a sweet and sour orange and honey glaze that coats crispy golden brown chicken wings in the most wonderful way. I love to serve them piping hot in batches with orange wedges and a few slices of fresh red chili.

Recipe: Sweet and Spicy Orange Glazed Chicken Wings

Ingredients

  • 2.5 lbs chicken wings (with tips)
  • 2 cups Gluten Free All Purpose Flour
  • 2 teaspoons Kosher salt
  • Oil for frying
  • FOR THE SAUCE:
  • 2 tablepsoons vegetable oil
  • 1 clove garlic, minced
  • 1 cup orange juice
  • 1/3 cup honey
  • 2 tablespoons rice vinegar
  • ½ teaspoon red pepper flakes
  • kosher salt

Instructions

  1. Rinse the chicken wings with cold water and drain. Meanwhile prepare a large baking dish with the gluten free flour and salt.
  2. Bring a large heavy pot with several inches of vegetable or peanut oil up to 375 degrees.
  3. While you are waiting for the oil to come to temperature, add the chicken wings to the flour and salt mixture and toss to coat lightly in the flour. You will probably have to do this in two batches (same with the frying.)
  4. When the oil is at the appropriate temperature (I always use a thermometer for deep frying) gently add the chicken wings to the oil.
  5. While the chicken wings are frying (stir and flip occasionally over about 12 minutes) begin the sauce.
  6. For the Orange Sauce:
  7. In a large saucepan over medium heat add the oil and the garlic and sauté for 1 minute. Add the juice, honey, rice vinegar and red pepper flakes. Stir and simmer the sauce for 6-8 minutes on low heat while the sauce thickens. Remove from the heat and set aside.
  8. Remove the wings from the hot oil with tongs and add half of the sauce and toss them to coat. I also like to serve them with a little sprinkle of kosher salt. Continue with the next batch and serve these hot.
