Did you all have a wonderful weekend?! I loved our weekend. Pete was finally back in town and it was that perfect kind of fall weather that makes the season my favorite if the whole year. And honestly- the best of fall is these few weeks right now
Before it gets too cold or really starts raining. It was just gorgeous today with the leaves falling and just a little sunshine. I tried to really stop and make a point to enjoy, since things are always so busy and I know this special little pocket of time will be over in a flash.
I felt the same way about my girls this weekend. They are just growing up SO fast and I am clinging to this year like it’s a life raft. I feel like “5” is the last time that a kid is really a “little one.” Since Coco turns 6 in a few weeks this feels like the last few moments in this chapter.
When I asked them what they wanted to do on Saturday, and that we could do anything they told me that they wanted to do a Halloween run-through. That means that I spent hours doing makeup and then we had a little photo shoot. Pia put the pictures up on her blog and they are SO CUTE!!!!
Then I made totally delicious cardamom apple snack cake and drizzled a vanilla glaze over the top just to make it even more delicious.
Pia thinks it is important to make sure that I tell you that it is called a “snack cake” instead of a regular cake because it is not quite so sweet. Which is what makes me feel like it is great for breakfast or an afternoon snack- and perfect for tucking into lunch boxes.
We had big pieces this afternoon with homemade mulled cider (and Pete and I may have spiked our cider with a little bourbon!) and it was a wonderful- I hope you try it!
- 1 cup coconut milk
- 2 tablespoons apple cider vinegar
- 4 ½ cups gluten free flour
- 2 cups beet sugar (or you could use cane sugar)
- 4 teaspoons baking powder
- 2 teaspoons baking soda
- 3 teaspoons xanthum gum
- 1 tablespoon cinnamon
- 2 teaspoons cardamom
- 1 teaspoons nutmeg
- 2 teaspoons kosher salt
- 2 cups unsweetened applesauce
- 1 cup vegetable oil
- 1 apple thinly sliced across into rounds (I used a gala apple)
- Vanilla Glaze:
- ⅔ cup powdered sugar
- 1 teaspoon vanilla
- 1 tablespoon coconut milk (plus more if you need it to get it to the right consistency)
- In a small bowl, combine the coconut milk and vinegar and set aside for at least 10 minutes.
- Preheat the oven to 350 degrees. Prepare a 9x13” baking dish with vegetable oil spray.
- In the bowl of a standing mixer fitted with a whisk attachment, combine the dry ingredients.
- Add the applesauce and then with the mixer running on low, add the vegetable oil, and coconut milk. Mix well until you have a smooth batter.
- Transfer the batter to the prepared cake pan. Place the apple rounds on the top of the cake. Bake the cakes at 350 degrees for 45 minutes.
- Remove the cake from the oven and let it cool before glazing.
- While the cake is cooling, make the Vanilla Glaze: in a small bowl whisk together the powdered sugar, vanilla and coconut milk until smooth. Drizzle it over the cake.
- Slice the cake into squares and serve warm or at room temperature.

I can’t believe you have a blog for Pia’s favorite things. That is the cutest thing ever. Tell her and her sister Coco that their costumes are a- mazing! What a nice mom to do all that make-up. It must have taken forever. At least they got a yummy apple cake treat afterwards.

In the recipe apple cardamom snack cake gluten free and vegan under ingredients it says : 1 coconut milk , but it does not say how much coconut milk .
Would you please tell me how much coconut milk I would need to use!!!!!
