I’m breaking tradition and saving my usual #ThirstyThursday Cocktail recipe for tomorrow and bringing you a special treat instead. CHOCOLATE WAFFLES!!!

I watched that show incessantly as a kid- so funny! But I am truly honored that I get to share my cooking with so many people today.
While I try to keep my cooking really healthy and full of fresh whole foods- I am all about creating a sustainable life style- what I do is NOT a diet, it’s a lifestyle. And part of creating that sustainable way of living is including dishes that help you to not feel deprived or like you are missing out on any of the “good stuff” just because you have food allergies or sensitivities. For those of you who have my book or regularly read the blog, then you know what I am talking about- stuff like Dark Chocolate Coconut Fig Ice Cream, Blueberry Sherbert and Strawberry Rhubarb Galette. I like to keep some of these sweet treats in my life to balance out all of the healthy soups and salads that are the mainstay of my diet.
You know, something like these gorgeous Chocolate Waffles! Hot maple syrup is always amazing, but I really prefer fresh berries and a dusting of powdered sugar. With all of the fresh berries in season at this time of year- it’s just such an awesome combination. With the weekend coming up, stock up on your favorite summer fruit and you gotta try this recipe!
- 1 cup unsweetened coconut milk
- 1 tablespoon apple cider vinegar
- 1⅓ cups gluten free all-purpose flour
- 1 cup unsweetened dark cocoa powder
- ⅓ cup sugar
- 2 teaspoons baking powder
- 1 teaspoon kosher salt
- ¼ cup melted coconut oil
- ½ cup gluten free beer
- Preheat the waffle iron.
- In a small bowl combine the coconut milk and the vinegar and set aside.
- In a medium mixing bowl, whisk together the flour, cocoa, sugar, baking powder and kosher salt. Add the coconut oil, beer and coconut milk and whisk until smooth- the batter will be thick.
- Spoon into the waffle iron and cook until golden and crisp.

Simply beautiful and I’m sure delicious. I have never had chocolate waffles only chocolate chip. I think after seeing these it’s time to change that fact.

Hi – Is there a substitute for the Gluten Free Beer and/or what is its purpose in this recipe?
Also, a lot of your recipes substitute beet sugar for cane sugar, does that work in this one?

Hi. I was wondering the same thing. From the research I’ve done, ginger ale would be a good substitute for beer in a recipe like this.

I feel like these would be amazing with the fruit and powdered sugar PLUS Raspberry/Blackberry Syrup made the old fashion way 🙂 I am making these tonight for dessert and I am sure they won’t disappoint!
What kind of Waffle Iron do you use? In the market to start making my own gluten free waffles at home but don’t have an iron 🙂

Shelly- I am not sure how it will work, but you could try subbing banana puree?
I tried these today and wondered if they typically are dense and chewy? Not sure if they were under cooked or just me getting use to a new types of ingredients. Thanks.
Hi Lorine! Maybe they are undercooked? They should really be pretty close to regular waffles-shoot! Is there any way I can help you trouble shoot?
