I hope that you all had a great weekend! We were really quite here and I slept a lot and am trying to shake off a February virus that is trying to take me down. I can think of no better place to ditch it for good than Mexico where I am headed in a couple days (I am SO excited!)

But in the meantime, we have a little holiday to celebrate! Valentines Day is tomorrow and the girls are pumped up. We spent half the weekend making the cutest Valentines for their classes and I am in charge of bring the art project to Coco’s class. There will also be baking homemade treats and a wonderful dinner on Tuesday night. What are you guys doing?

But Tuesday morning is going to be waffle time!! I am making these gorgeous Coconut Waffles with Raspberry Sauce. They are SO GOOD you guys. The waffles bake up so golden and fluffy and delicious and that raspberry sauce is everything- the perfect combination of flavors plus it’s a gorgeous festive color perfect for Valentines Day!

Coconut Waffles with Raspberry Sauce

Ingredients
  • Coconut Waffles
  • 1 cup unsweetened coconut milk
  • 1 tablespoon apple cider vinegar
  • 2 cups gluten free all-purpose flour
  • ¼ cup sugar
  • ½ cup toasted unsweetened shredded coconut
  • 2 teaspoons baking powder
  • 1 teaspoon kosher salt
  • ¼ cup coconut oil
  • ½ cup gluten free beer
  • Raspberry Sauce
  • 2 cups frozen raspberries
  • ¼ cup sugar
  • 2 teaspoons lemon juice
Instructions
  1. Preheat a waffle iron.
  2. In a bowl, combine the coconut milk and vinegar and set it aside.
  3. In the bowl of a standing mixer, combine all of the dry ingredients and then whisk in the coconut milk and the coconut oil and beat until you have a smooth batter (studded with the coconut).
  4. Spray the waffle iron with coconut oil spray and spoon the batter into the hot waffle iron and cook until golden brown, about 3 minutes. Transfer to a plate and serve hot with hot raspberry sauce. (Or keep the waffles warm in a 300 degree oven until ready to serve.)
  5. For the Raspberry Sauce:
  6. In a small saucepan add the frozen raspberries, sugar and lemon juice and bring to a simmer while breaking up with a fork until you have a sauce and the sugar has dissolved.
