Sweet and Spicy Pickled Red Onions
If you like sweet and sour and spicy, these pickled onions are incredible! The hot liquid will slightly cook the onions and jalapeno’s, while the sugar and vinegar pickle them. The jalapeno’s release the spice into the pickling liquid.
Sweet and Spicy Pickled Red Onions
1 large red onion
1 cup rice wine vinegar
½ cup sugar
1 jalapeno, thinly sliced
In a small pot, bring the vinegar and sugar to a simmer.
Meanwhile, thinly slice the red onion.
Place the onion and jalapeno in a bowl and pour the sugar/vinegar mixture over the top.
Stirring occasionally, let the onions and peppers marinate in the mixture. I even store the onions in the liquid in the refrigerator.

They are amazing with the carnitas I posted the same day- but I love them so much I use them on sandwiches, in salads and anywhere else I can add them! On Friday I am posting an Asian noodle salad using them.

I have to say -these are the BEST. I’ve made them twice in a week and am wanting to put them on everything… so far they’ve topped roast beef sliders, tacos, and salads. LOVE them!

I haven’t actually! I am not really sure how I would do that- but if I knew how, I probably would!
I love simple recipes like this because there’s SO much room to play with the ingredients! I do pickled onions like this with white onions and apple cider vinegar to go with pork, or white vinegar/lemon juice with sliced scallions on fish.
