Whoah. What a loooong weekend.

My keyboard has maple bar frosting smeared on it because I ate donuts like three times in 4 days. I can’t seem to get it off. I’m so gross.
I think my teeth are purple from red wine. Hot.
It’s time to start toning it down, right? Just a few more days till I pretend to clean up my eating! Like this Crispy Salmon, Bacon and Avocado Sandwich. It is so good and so easy and the whole thing can be made in about 10 minutes. Hard to beat, right?
I was thinking about a BLAT, but since I had this gorgeous piece of salmon in my fridge, I thought I would try that instead. And indeed this was amazing! I feel like it would be a great weeknight dinner served with a green salad.
For tomorrow look for one last 2012 cocktail for New Years Eve!
In a small pan, heat the vegetable oil over medium high heat.
Sprinkle the salmon with kosher salt Place the salmon skin side down in the pan. Cook without moving for about 3 minutes and then flip over to the skin side up. Cook until crispy on the outside and just cooked through in the center, about 6 minutes total.
While the salmon is frying, lightly toast the bun.
Slather the bun with grainy mustard and top with the salmon, tomato, avocado and bacon.
Slice in half and serve immediately.

- -6 ounces filey of salmon, skin on (scaled)
- -2 tablespoons vegetable oil
- -1 ciabatta bun
- -½ tomato
- -2 tablespoons grainy mustard
- -2 slices crispy bacon
- -¼ avocado, sliced
