Chocolate Brownie Mug Cake
(Gluten Free, Dairy Free, Egg Free, Soy Free, Cane Sugar Free)
I have been dying to share this cake with you. Well, I am not sure if it is a cake or a brownie or just a miracle- but this cake really does it for me.
The first two weeks of trying to follow Pia’s allergy list were hard enough in the savory department, but you try baking with no wheat, gluten, dairy, eggs or sugar. It was initially crippling.
The first ventures into baking with any of that stuff was as nasty as it could possibly be. Like gag and spit it out bad. So when we first came up with this recipe, and it was delicious!! it felt like a complete blessing. I found this recipe on line, and it inspired me to make a version that was allergy free.
I can’t tell you how exciting it was for Pia too. I had the batter waiting when she got home from school, and I let her fill the mugs and microwave them herself. The look on her face when she tasted this was priceless- she was just soooo happy! And truthfully, so was I. This recipe gave me hope that there is a way to make things that taste good, even sweets, with such a limited ingredient list. And I would say, that in lots of ways, this recipe was like opening the floodgates to a bunch more successful recipes. But this first one I will always be appreciative of.
I also like this recipe with a generous dollop of whipped coconut cream and some toasted coconut chips on top too. It kind of reminds me of this cake, but in a mug! Head on over to Pia’s blog to see her take on this.
Recipe: Chocolate Brownie Mug Cake (gluten free, vegan)
Ingredients
- 1/2 cup GF flour
- 1/2 cup beet or palm sugar
- 4 Tbsp cocoa (natural, unsweetened)
- Pinch of salt
- 1/2 cup coconut milk
- 4 Tbsp canola oil
- whipped coconut cream to serve
Instructions
- Place flour, sugar, cocoa, salt, coconut milk and oil in the jar of a blender and puree until the mixture is smooth and there are no lumps.
- Divide the batter between two microwave safe ceramic mugs.
- Place in microwave and heat on high until the mixture is cooked through, about a 1 minute and 40 seconds to 2 minutes for a 1000 watt microwave. It should still be moist when cooked through, not dry.
- Let cool for a minute and serve with coconut whipped cream or sorbet.

what type of gluten free flour do you recommend for this… i’ve been struggling to find a pre-made store bought one that i am completely fond of. If you have a recipe you love… could you please share?
Jill- my favorite GF flour is Cup4Cup. However- it has milk powder in it, so if you also have dairy intolerance, it doesn’t work. In it’s place I have just been using Trader Joe’s GF AP flour which is what I used for the cake in these pictures.
This is perfect for the moments when you need something warm, gooey and heavenly! It is perfect and just amazing!
In the old days we used to use Jolly Joan egg replacer to make things egg free but it’s called http://www.ener-g.com/egg-replacer.html now. Not sure if any of the ingredients are on Pia’s list.

I’m so excited to try this! My boyfriend and I have recently switched to a plant based diet and good desserts aren’t easy to find. My only question is can I use other types of flour or does it have to be gluten free? I have quinoa flower on hand at the moment.
Hi Beth- you will have to try it, I have no idea!! But AP GF flour is pretty easy to find at trader joes and every grocery store. If you try the quinoa flour, let me know!

Absolutely!! We just use Beet sugar as a substitute because my daughter is allergic to cane sugar!
Interestingly enough, depending on where you live, you may be getting either beet or cane sugar as your “regular”. I have contacted American “Crystal Sugar” Company to find out whether their sugar was sugar beet or sugar cane based and they said it depends on what plant it comes from! 🙂
can i use rice milk if i don’t have coconut milk on hand?

Thank you for this. My husband is allergic to cane sugar as well but has a huge sweet tooth. Eating too much sugar-free treats lead to bloating and headaches. I am always looking for something to whip up quick when he gets a craving at night. Great idea. Thanks.

You could certainly try this with nut flour, but I have no idea about baking it to be honest Sophie- I am sos orry! I can’t wait until my book comes out and i can share the regular GF vegan brownie recipe with you all 🙂
Do not use coconut flour with this recipe! Super dry. Yuck.
Has anyone actually made this? I’m sorry but this was awful. Tried to make it for my daughter and I and it was a total fail. Total disappointment. 🙁

I would like to know the same thing LOL I used the Aldi brand gf AP flour blend (not always available) and it was pretty good, except not sweet enough–I will up the sugar next time! LOL

When you say gf flour…which one? With or without Xantham gum? They are all so different with different results. The cooks country make it yourself recipe seems to have the best taste and texture overall but requites adding a specific amount of gum or phylum husk depending on the recipe. Which flour did you make this recipe successfully with? They are so expensive i hate to experiment like i did with plain old wheat flour.
I like to use Bobs Red Mill Gluten free All-purpose baking flour- it does not have xanthum gum in it.
