You guys. We had the worst Saturday night. We went to a friends house to watch the big Mayweather Pacqiuoa Fight, which I have been looking forward to for months. I am not kidding- for those of you who don’t know me IRL, I am a HUGE boxing fan.
However our girls had a long day on Friday, and then a sleep over at their Yia-Yias on Friday night (didn’t get much sleep) and then had an 8 hour Musical Theatre Practice on Saturday followed by a long playdate. Basically, they hit the wall at about 7:45. Hard. Fueled by the fear that the dog had been home alone for too long and that I would come home to a pile of you know what somewhere on my living room carpet, we thought we should go ahead and go home.
We raced home and immediately went to order the fight, which we figured we had about 15 minutes to go time. COMCAST FAIL. We waited for an hour and a half before we finally gave up. Pete was so depressed he just went straight to bed. I tragically “watched the fight” on Twitter.
The nice part of the weekend was that I got to spend most of both days in the garden. If any of you are gardeners, then you know how you can just spend hours on hours on hours out there and it always seems like there is more to do! But one of the cool things I did this year, was to rip out a lot of my flower gardens and change the garden closest to my kitchen into an almost entirely functional/edible garden. Because herbs and lettuces and big fluffy artichoke plants are beautiful too!
Like this gorgeous pile of lettuce. I am picking a colander full like this every day I have so much lettuce growing- it is like I MUST have a huge salad each night just to keep up.
And this particular concoction I had to honor with the traditional name of Green Goddess. Because, well, just look at it. When eating healthy is this beautiful and delicious, it’s really a treat, not a burden.
Recipe: Green Goddess Salad
Ingredients
- 8 cups mixed greens
- 2 cups golden pea shoots (optional)
- 1/2 cup persian cucumber slices
- ½ cup edamame beans
- 4 green onions, thinly sliced
- ½ cup radish slices (I used breakfast and watermelon radishes)
- ½ cup English peas, thinly sliced
- 1 avocado, large dice
- chive blossoms to garnish
- Fresh Herb Viniagrette
- ¼ white onion, very finely diced
- 2 tablespoons flatleaf parsley
- 1 teaspoon agave (optional)
- 1 tablespoon of grainy mustard
- 3 tablespoons rice vinegar
- 2 tablespoons olive oil
- kosher salt
Instructions
- In a large bowl or on a platter, gently toss the greens and vegetables.
- In a small bowl, whisk together the vinaigrette and drizzle over the salad. Serve immediately.
Preparation time: 15 minute(s)
Number of servings (yield): 4
First off, this is gorgeous and I wish I could just stick my fork in it right now. But it looks like your dressing and in your salad has cucumbers and either i’m just for some reason not seeing cucumber in the ingredients list (it happens) or it’s not there. 😛 I realize this is trivial, but i wanted to know if that was cucumber in the dressing 🙂
Hi Teresa! I was like “cucumbers?” but they totally are in the salad (thank you I fixed that!) but they are not in the dressing- that is the white onions which are crunchy!!

Your salad is gorgeous but to call it Green Goddess is a sham. Green goddess is a salad dressing, typically containing mayonnaise, sour cream, chervil, chives, anchovy, tarragon, lemon juice, and pepper.
I’ve been making it for 50 years and I believe it would overpower your beautiful salad. Sticking with a vinaigrette is probably best.
I came across this Green Goddess salad in Pinterest and I’m in love. It’s so visually arresting. But where do you get your produce? I’ve never seen golden pea shoots. I guess a farmer’s market would be my best bet?
