Mango Coolers

serves 4
-3 cups ripe mango, chopped into 1 inch pieces
-4 shots (4-1/2 ounces) dark rum
-1/2 cup fresh lime juice
-3 Tbs simple syrup (recipe below)
-4 cups of ice cubes

1) Combine everything in a blender and puree until smooth.

2) Serve in chilled glasses, and garnish with mint or fresh mango.

Simple Syrup

makes 1 1/2 cups
-1 1/2 cups sugar
-1-1/2 cups water

1) Combine the sugar and water in a small saucepan, and cook it over medium-high heat.

2) Cook, stirring frequently until the sugar is completely dissolved. This should take about 4 minutes. 3) Remove from heat, and pour the syrup into a glass container, and chill. (It can be refrigerated for up to 2 months.)
