I love Kettle Corn! It is a real problem for me, and I have been known to sit at a Mariners game and eat an entire bag with my dad, (and we are not talking about a standard sized bag). Now I have Pia, my 2 year old, to help me indulge since it is a recent favorite of hers too. She asks me for it often, and I think the microwave version is pretty nasty (sorry!). I finally just thought- how hard can it be to make it ourselves? Well, I found out that it is so easy that I feel a little foolish for not having made it sooner, and a little concerned that I know how to make it now (as in, I don’t need to be sitting down with a big bowl of kettle corn in the afternoons!)

Anyways- here is the recipe. It is a little salty and not at all greasy, and then it has a very fragile and light crispy coating of sugar. Great for a movie night…..

Kettle Corn
¼ cup vegetable oil
½ cup pop corn kernels
4 Tbs of white sugar
kosher salt

In a large pot, heat the oil over medium low. Add the pop corn kernels and let them heat for a minute (before they start popping) and then sprinkle the sugar over the kernels and put the lid on. Let the popcorn pop until the pops are far apart, and then immediately pour out into a bowl and lightly salt.

Warning!! With this popcorn, wait a few minutes before digging in- the sugar takes a minute to cool down and get crispy, and no one wants to burn their hands with too hot sugar.
