This is a great, fresh side dish. What makes it unusual is that the corn is raw. It is sooo sweet and bursts in your mouth when you eat it. It is paired with peppery radishes, (which are really plentiful at the farmers markets right now and inspired this recipe), fresh herbs and beautiful cherry tomatoes. It works really well with any BBQ meats or seafood- if you have to bring a side to a 4th of July party this is a beautiful and delicious choice!

Corn Salad
8 ears fresh corn, kernels cut
2lbs multi colored cherry tomatoes, sliced in half
1 cup radishes, finely sliced (a mandolin works best)
1 medium red onion, finely chopped
1/3 cup parsley, finely chopped
1 cup basil, finely chopped
1/8 cup red wine vinegar
1/8 cup olive oil
kosher salt and black pepper

Combine the corn, tomatoes, radish slices, onion and herbs in a bowl. Lightly whisk together the oil and vinegar and pour over the ingredients. Season with salt and pepper. Pour onto a platter to serve.
