This bread is a spin on traditional garlic bread. Always delicious, I know, but it is fun to change things up sometimes! My herb garden is completely overgrown, and one of the culprits is the chives, so I have to start inventing more ways to use them in bulk. I love chives- their wonderful mild onion flavor is distinct and incredible, without being overwhelming. Mixed with melted butter and spooned over rustic ciabatta bread, it is pretty wonderful.
Try it in place of your usual garlic bread; it is great for soaking up summer BBQ and for dunking in soups and chowders.
Chive Bread
2 loaves ciabatta bread, split in half horizontally
2 sticks butter
1 cup finely minced chives
Pinch of kosher salt
Preheat the oven to 400 degrees.
In a small saucepan, melt the butter and add the chives and the salt and mix gently with a spoon.
Place the bottom loaves on a baking sheet, and the tops of the loaves next to them. Spoon ¼ of the melted butter mixture on each of the 4 bread halves. Place the tops on the bottoms and place in the oven to bake.

Great idea, my herbs are overtaking my tomatoes! Now, if we could just figure out a good recipe for the masses of chocolate mint taking over my deck planters…
