Rosy Rigatoni with Sausage
It was my daughters third Birthday this week, and she got to request whatever dinner she wanted. I was totally shocked when she asked for pink noodles! This was my version of pink noodles- a creamy rosy rigatoni with mild sausage. I used a batch of the tomato sauce that I always keep stock piled in the freezer, (heirloom tomato sauce 7/2007) but you could totally use a jar of good quality tomato sauce.
This is a very fast weeknight dinner, and incredibly delicious! HUGE hit with my kids and husband alike!
1lb of dried rigatoni
2 tsp olive oil
.75 lbs mild sausage
3 cups tomato sauce
½ cup heavy cream
Freshly grated Parmesan cheese for serving
Bring salted water to a rolling boil. Cook rigatoni according to package directions.
In a saucepan add the oil and sausage and cook over medium heat.
Break the sausage up and cook until it is browned on the outside.
Add the tomato sauce, and stir.
Simmer until the pasta is done.
When the pasta is drained, stir the heavy cream into the sauce.
Add the Rigatoni and gently mix together.
Top with parmesan cheese and serve hot. Enjoy!
