Apple-Cranberry Spiced Cobbler (take two)

This is hilarious…Kind of. I was all pleased with myself for coming up with this creative alternative for a Thanksgiving dessert. I was thinking about how easy it was to make, how I love the sweet and tart apples with the sour cranberries. How the ginger and cinnamon turns the biscuit topping into a lovely caramel color and how those spices give just the right flavor to the fruit. Nice, right? Turns out I have made this before!! And posted it. Last year.

Sleep deprived much? Brain not firing on all cylinders much?

But the funny part is that I made up a different recipe! Plus this version actually has a picture! So lets just call this Apple Cranberry Spiced Cobbler (take two!)

Apple-Cranberry and Spice Cobbler, serves 8
Fruit Filling
8 granny smith apples
3 cups fresh cranberries

Pastry
2 cups flour
3 Tbs sugar
2 tsp cinnamon
2 tsp ginger
½ tsp salt
½ cup Crisco
½ cup cream

1 stick melted butter
¼ cup sugar pinch of cinnamon

Peel and thinly slice the apples.

Pile the fruit into a buttered 9×13” baking dish.

Melt the stick of butter.

Drizzle half the butter over the fruit

In a bowl of a food processor, mix together the flour, sugar, spices, salt and Crisco.

Combine the Crisco into the dry until crumbly.

Add the cream and pulse until it is a rough dough.

Break the dough up into chunks and place them on top of the fruit.

Drizzle the remaining melted butter over the pastry chunks, and then sprinkle them with the ¼ cup sugar.

Bake the cobbler at 400 degrees for about 40 minutes until the cobbler pastry is golden brown and crispy and the fruit is bubbling.

Serve hot with a scoop of ice cream and Enjoy!
