Spinach Totellini Soup

How would you feel if I told you that you could have this lovely bowl of soup on your table in 10 minutes flat? I’m totally serious.

Green onion scented broth with fresh spinach and peas serve as a base for delicate little spinach tortellini. So pretty, and so good! but also, practically instant! I made this for my daughters as an after school snack. They were starving and it was freezing out. Then there was a toss up happening between soup and tortellini. Plus I wanted them to eat something healthy before going to Greek Dance School (Is that so funny and cute that they are learning to Greek Dance!?)- this Spinach Tortellini Soup was the answer!

Tortellini are one of those weird things where kind of no matter what is inside of them my kids will eat it. Pia was like- “Wait mom! What’s in these portalinini’s?” I was like “umm…. I dunno. They are just plain I think? Do you like them?” and then she was like “yeah- can I have this soup in my lunch?” and I was real casual, like “yeah, sure”.

Sometimes it’s best in life to just say “umm… I dunno.”

NOTE: I got these adorable little fresh spinach tortellini at Trader Joes, but they sell similar products at my local grocer too, so I am sure you can find something like this. Cheese tortellini would be a nice substitute.

In a medium pot, bring the 4 cups of broth and the green onion to a simmer.

Add the tortellini and cook for 1 minute. Then add the fresh peas and cook one minute further. Season with kosher salt.

Just before serving, add the spinach leaves, and then ladle into bowls.

Ingredients

  • -4 cups vegetable broth (or chicken broth)
  • -2 green onions, finely sliced
  • -2 cups fresh spinach tortellini
  • -1 cup fresh peas
  • -1 cup fresh baby spinach leaves
  • -Kosher salt

Instructions

  1. 1. In a medium pot, bring the 4 cups of broth and the green onion to a simmer.
  2. 2. Add the tortellini and cook for 1 minute. Then add the fresh peas and cook one minute further. Season with kosher salt.
  3. 3. Just before serving, add the spinach leaves, and then ladle into bowls.

Preparation time: 2 minute(s)

Cooking time: 5 minute(s)

Number of servings (yield): 4
