So yesterday, in the blustery freezing weather I craved to duck into Pastis in New York and happily gorge on one of my favorite things ever- A huge piping hot bowl of French Onion Soup. For me, the rich caramelized, buttery onions and broth, crispy brown bread and gooey melted gruyere are one of the best indulgences ever. I always make a point to stop there and have that lunch when I am here, and with it being as cold as it is- it seemed like the perfect day for it.
Dreaming of tucking into that soup, I remembered that I had this recipe stashed away for you. It has all of the flavors of traditional French Onion Soup, only in a very convenient pizza! I love the idea of hand held slices of caramelized onion and melted gruyere! Plus the tiniest hint of scotch and a bit of sugar makes the onions that much more indulgent.
The night I had this, I added a big green salad with avocado and it was amazing. Also, I added options for this to be gluten free by using this crust, and you could certainly use vegetable broth instead of beef for a vegetarian dinner. It’s always nice to have options, right!?
To make this French Onion Pizza, this is what you do:
Preheat the oven to 400 degrees and prepare a sheet pan with a drizzle of olive oil.
If you are using regular pizza dough, then stretch it out into a large oval and fold the edges over to create a crust. If you are using the gluten free pizza crust, than follow the directions in this recipe for preparing the crust.
Start the onions: In a heavy pan or skillet, melt the butter and add the onions along with a sprinkle of salt.
Cook over medium heat until the onions are soft and tender about 7-10 minutes.
The pan will be very dry, add the scotch and keep it away from the flame or it will catch fire. Stir it in and then add the 2 cups broth. Cook for another 15-20 minutes over medium-low heat, until all of the liquid has cooked off and the onions are very soft.
Sprinkle them with sugar and season to taste with Kosher salt. Set aside.
While the onions are cooking, drizzle the crust with olive oil and sprinkle with kosher salt and par-bake the crust for 10-12 minutes until it is golden and firm.
When the crust and the onions are finished, spread the onions liberally over the crust.
Arrange the thin slices of gruyere over the top of the onions. Drizzle with a little more olive oil and bake the pizza for another 8-10 minutes.
Sprinkle with a little curly parsley, slice and serve immediately.

French onion soup is one of my faves so this pizza is just perfect!
Thanks Laura!
Caramelized onions are like candy, soooo good!
This is the perfect way to enjoy French onion soup more often!!!! Pizza makes an awesome vessel for caramel used onions. Enjoy NYC.
RIGHT Bri!? I like that- a vessel, as in something edible to shove more caramelized onions into my mouth without actually having to use silverware!
This looks amazing – caramelized onions are perfection 🙂
Caramelized Onions make the world go round Alicia 🙂
The things you do to pizza! Thank heavens your inspirations take flight! I can seriously imagine diving into a slice of this. Love French onion soup. Thanks for the option of veggie-izing.
Thank you Vicki!! Glad that you like it, and I am trying to more and more thoughtful of my vegetarian readers 🙂
I’m so bummed that Pastis is closing, even if it’s just temporary. The French Onion Soup there is just about one of the most quintessential NYC moments that exist. This pizza makes me so very happy.
French onion soup is the besssst! And this pizza?! Thank you so freaking much for this recipe. TOTALLY making this!
You are a pizza genius! The bowl of soup in cold weather sounds lovely. And this pizza. . . . we happen to have a pizza crust in the freezer, and a bag of onions needing to be used up. Guess who’s going to be peeling and slicing onions this weekend?
Yum! My two favorites combine! Awesome!!
You’ve outdone yourself this time. Those onions alone are breathtaking.
This looks insane / divine. I’m sure I would be in onion heaven after having a slice. Definitey going to try this pizza!
You’re kidding! I’m completely dying over this right now.
Thanks Bev 🙂
If I don’t have scotch (or bourbon, etc) what alternate would you suggest? And in 7) – what shrimp?????
You could use a little sherry or even red wine or balsamic vinegar. Shrimp is gone- just a typo!
How divine! I could eat caramelized onions for every meal!
Heather I saw this recipe bopping around on Pinterest and could not get the photos out of my head 🙂 We just LOVED this pizza! I had to try to stop myself from eating half the (16-inch!) pie in one sitting. I added a little smoked Gouda that I had on hand, which was wonderful, but this pizza doesn’t need that to be a winner! A-PLUS girlfran — one of the best things I’ve cooked in weeks 😉
Thanks Sophie!! SO happy you liked it!
Thank you so much Sophie!! That makes me so happy- very glad to have you here!
Wow, we tried this last night en this was divine! It is going in my permanent repetoire. I used cognac instead of scotch which worked a treat.
OMG Marjolein- Cognac sounds perfect! Very happy that you liked it!
I am so glad Marjolein!! Cognac with this eon ions sounds divine!
