OMG. I have the biggest mess. Not only did the freezer go out (as chatted about on Saturday) but the fridge died too. Goodness. The smell. The mess. Happy Monday everyone!!
Since I am having to start over completely with the contents of my fridge and freezer (SO annoying), my mind is on BASICS. Like this Fresh Lemon and Herb Pasta.This is one of the best sides ever. It goes perfectly with Chicken and Fish or makes a lovely vegetarian (vegan actually!!) dinner all on it’s own.
You also gotta love that this takes 15 minutes, and at least 5 of those is waiting around which is my favorite kind of dish! Ok, Have a happy Monday and wish me luck on a major round of fridge cleaning today!! (Any tips appreciated!!)
To make this Fresh Lemon and Herb Pasta, this is what you do:
Bring a large pot of salted water to a boil. Put the spaghetti in the water, and cook until al dente. In the mean time, whisk together the garlic, shallot, chili, lemon juice and zest and olive oil. Season to taste with salt and pepper. Chop the fresh herbs and set aside.
Drain the pasta and transfer it to a large bowl. Pour the sauce over the pasta and add the fresh herbs. Toss to coat the pasta. Season to taste with salt and pepper, and if needed another squeeze of fresh lemon juice. Serve immediately!
Recipe: Fresh Lemon and Herb Pasta
Ingredients
- 1 pound spaghetti (I used gluten free)

This looks divine! All my favorite flavors mixed together with pasta and such simple instructions. My kinda dinner. As for the freezer and frig, Who Ya Gonna Call? Ghostbusters started playing in my pea brain. Could there be a glitch in the fuse box or the 220 tripped? Normally I’m all about recycling but honestly, I would probably wheel in the garbage can and start dumping. A massive wipe down with vinegar and baking soda would be next. Then book yourself into a well deserved day spa.
I dumped every last thing, and most of it was dripping with melted berry juice and meat purge. Gross. Baking Soda was my weapon of choice. After bleach. That was just the way it had to go down. A chemical bath to repel the rotten meat and blood. Bleck. Just thinking about it makes my tummy roil!
This looks yummy. I think I will make this as a side for my friends for girls

Omg, I’m SO sorry the fridge and freezer issue happened. That’s one of my biggest fears when there’s storms here. So much money lost 🙁 too bad you guys didn’t have a blanket of snow outside so you could just put everything in the snow!! I can’t even tell you Julie! There was a frozen “store bought” juice cleanse in that freezer($$$) boo!!! and tons of steak and frozen berries. It was just such a terrible waste. And yes, for once, there was some lamenting about not cold enough weather!!

Totally feel your pain with the fridge and freezer. Quite a few years ago we had a refrig from a manufacturer that starts with an “s” and ends with an “o” that flooded the whole downstairs of our house. Yeah – you heard that right. The ice maker went haywire. NOT fun.
Anywhoo this pasta looks super easy to throw together. Now that we’re actually having some nice weather and temps here in the Northeast, who wants to cook? We just want to throw something together and eat it outside. Perfect!
