Lemony Pasta

Since I am having to start over completely with the contents of my fridge and freezer (SO annoying), my mind is on BASICS. Like this Fresh Lemon and Herb Pasta.This is one of the best sides ever. It goes perfectly with Chicken and Fish or makes a lovely vegetarian (vegan actually!!) dinner all on it’s own.

You also gotta love that this takes 15 minutes, and at least 5 of those is waiting around which is my favorite kind of dish! Ok, Have a happy Monday and wish me luck on a major round of fridge cleaning today!! (Any tips appreciated!!)

To make this Fresh Lemon and Herb Pasta, this is what you do:
Bring a large pot of salted water to a boil. Put the spaghetti in the water, and cook until al dente. In the mean time, whisk together the garlic, shallot, chili, lemon juice and zest and olive oil. Season to taste with salt and pepper. Chop the fresh herbs and set aside.

Smoked Salmon Lemon Pasta with Mint Butter Sauce

Drain the pasta and transfer it to a large bowl. Pour the sauce over the pasta and add the fresh herbs. Toss to coat the pasta. Season to taste with salt and pepper, and if needed another squeeze of fresh lemon juice. Serve immediately!

Recipe: Fresh Lemon and Herb Pasta

Ingredients

  • 1 pound spaghetti (I used gluten free)
  • 1 large clove garlic, minced
  • 1 shallot, minced
  • 1 red fresno chili, minced
  • 1/2 cup fresh lemon juice (4 large lemons), plus
 all of the lemon zest from those lemons, minced
  • 1/4 cup olive oil
  • 1 cup freshly chopped parsley

Instructions

  1. Bring a large pot of salted water to a boil. Put the spaghetti in the water, and cook until al dente.
  2. In the mean time, whisk together the garlic, shallot, chili, lemon juice and zest and olive oil. Season to taste with salt and pepper.
  3. Drain the pasta and transfer it to a large bowl.
