Before we get into this recipe, can I ask you guys a favor? I am going to an 80’s themed party on Saturday and obviously costumes are mandatory. Please help!! What should I wear?? What screams 80’s to you? Perms? Crimps? Denim? Neon? I would appreciate any and all ideas!!
OK, this is a Thursday Quickie Guys. This Smokey Artichoke Hummus Dip has been helping me get through my late afternoons when all I want to do is grub down on THESE.
This dip is garlicky, artichokey (a word, right?) and then it has a zip from the vinegar and lemon. But it is the smoked paprika that really amps up the flavor and makes it so delicious.
This is perfect for when you are having a “healthy moment” (like I am trying to do). I cut up a ton of fresh veggies and then anytime that I want to go in the freezer and gorge on cookies, I take this out instead.
Recipe: Smokey Artichoke Hummus Dip
Ingredients
- 2 cloves Garlic, minced
- 10 ounce bag thawed frozen artichoke hearts
- 1 15 ounce can garbanzo beans, rinsed and drained (reserve a few for the garnish)
- 1/3 cup olive oil
- 3 tablespoons red wine vinegar
- 1 tablespoon lemon juice
- 1 tablespoon smoked paprika
- kosher salt to taste
Instructions
- In the bowl of a food processor, add the garlic, artichoke hearts and garbanzo beans. Pulse until mostly pureed. Then drizzle in the vinegar, lemon juice and olive oil and puree until smooth. Add the smoked parika and puree until completely incorporated. Salt to taste and pulse until completely combined.
- Transfer to a bowl and sprinkle with a little extra smoked paprika and the reserved garbanzo beans. Drizzle with olive oil and sprinkle with a little bit of chive or parsley. Serve with cucumbers or crackers.

Ah, the 80’s. A train-wreck for fashion. Shoulder pads! Dramatic eye shadow. Big hair. Really big hair. Metallic shiny fabrics. Leggings and ankle booties. Big on top, small on the bottom. Just think Boy George meets Alexis Carrington. Find reruns of Dynasty or Dallas. Purchase extra eye make-up remover. Have fun!
This looks incredible!! I’ve never been able to find frozen artichokes here, though. Would jarred ones work?
Amanda- the frozen artichokes are at Trader Joe’s or the freezer section at most grocers. Otherwise- use the canned in water variety and rinse well- NOT the jarred ones which are pack din oil.

Brilliant! I buy hummus at Trader Joe’s all the time. This sounds far better! 1980’s movies are what comes to my mind. Ghostbusters, Caddyshack, Pretty in Pink, The Goonies, Sixteen Candles, Amadeus, Ferris Bueller’s Day Off, should I stop now? Blondie, Olivia Newton-John, Irene Cara singing that song from Flashdance, come to think of it, that outfit from Flashdance. I really miss the prices of real estate from the eighties!

What a coinquinkidink…I had hummus, and grilled artichokes last night at dinner…it might have been easier just to make this delicious looking dip!
