Fresh hulled green peas (if you are lazy like me they sell them like this at Trader Joes), can of garbanzo beans and you just add a little garlic, a little lemon, some olive oil and salt and you have an incredibly delicious, healthy and EASY dip, spread or whatever else you want to use it for.

I am posting this today because I find that on the weekends, I am hanging around the house more and am therefore more prone to snacking on stuff I don’t feel like I should be snacking on. (you know what I mean?) So if you make a batch of this and keep some fresh veggies on hand, the temptation is greatly reduced just by having the goods waiting for you in the fridge. It is so easy to pull out cucumber slices or mini carrots of there is something good to dip it in, right?

So in celebration of an easy and relaxing weekend (were I am not pigging out like ususal) I am making up a big batch of this dip. If you are feeling the panic of fast approaching shorts weather or just like a healthy snack on hand for you or your kids, give it a whirl!

This is how you make Fresh Pea Hummus:

Bring a small pot of salted water to a simmer and add the peas. Cook for 1-2 minutes or until they are bright green and float to the surface. Immediately drain and rinse with cold water. Set aside.

In the bowl of a food processor, add the garlic and the garbanzo beans and puree until well combined. Add the lemon juice and then with the food processor running, stream in the olive oil. Puree on high until creamy.

Add the peas to the food processor and puree on high until very creamy and then season to taste with kosher salt.

Serve with crudite or crackers.

  • 2 cloves garlic, chopped
  • 1 can garbanzo beans, rinsed and drained
  • 1 lemons juice
  • ¼ cup olive oil
  • kosher salt
