Oh jeez, I meant for this up to be up earlier, but in what appears to be quite a streak for the Christo family, I spent a nice long Sunday night at Children’s with Pia. She tripped, hit her face on a chair and managed to split open her eyelid. Not Awesome. Did you know they use glue on the face now instead of stitches?! It is actually quite cool, and as a parent you are PUMPED when you realize that they aren’t going to sew up your 7 year olds face. Bring on the super glue.

Anyways- on a MUCH lighter and happier note, can we talk Taco’s?

In our house, we are not only accident prone, but also obsessed with Taco’s. Every variety (I have some interesting combo’s coming up by the way!) is exciting to me, and the thing that makes me so happy is how into them the kids are too- Pia especially. It makes my life so much easier as they are more and more open to trying new things.

Like these Lobster Tacos. Our local grocery store had all of these lobster tails in last week, and they were happy to cook them for me, which made the lobster even more appealing to me! And since I was craving tacos, it wasn’t hard to decide that I would just stuff the lobster into the tacos.

The rich lobster is beautifully complimented with the fresh little cilantro-radish salad and then everything is made better and tied together with the limey, slightly spicy Green Onion Cilantro Sauce. It is so bright in flavor and it just ties the whole dish together.

I feel like these would be awesome for a date night, or a fancy tailgating party, or really like pretty much any occasion at all! And if you don’t have access to lobster, you could use shrimp or langoustines (they have these frozen at Trader Joes!) Enjoy!

Recipe: Lobster Tacos with Green Onion Cilantro Sauce

Ingredients

  • Green Onion Cilantro Sauce:
  • 6 green onions, roughly chopped
  • 1 jalapeno roughly chopped
  • 1 cup fresh cilantro, packed
  • ½ cup vegetable oil
  • 1/3 cup fresh lime juice
  • Kosher salt
  • Cilantro Radish Salad:
  • 2 green onions, thinly sliced
  • ½ cup fresh cilantro roughly chopped
  • 1 bunch radishes, trimmed and thinly sliced
  • 2 tablespoons lime juice
  • 2 teaspoons oil
  • kosher salt to taste
  • Lobster:
  • 1 tablespoon oil
  • 2 limes zests
  • 1 tablespoon lime juice
  • 2 green onions, thinly sliced
  • 12 ounces Lobster or Langoustine (pre cooked) chopped into bite sized pieces
  • 8 corn tortillas
  • lime wedges
  • avocado slices

Instructions

  1. In the jar of a blender, combine the onions, jalapeno, cilantro, vegetable oil and fresh lime juice. Puree on high until you have a smooth green sauce. Season to taste with kosher salt. Set Aside.
  2. In a small bowl, gently combine the onions, cilantro, radishes, lime juice and vegetable oil. Toss to coat and then season to taste with kosher salt. Set Aside.
  3. For the lobster, heat a medium sauté pan over medium heat and add the oil. Then add the lime zest and the green onions. Add the pre-cooked lobster and gently warm the lobster with the onions and lime zest. Season well with kosher salt and sprinkle with fresh lime juice.
  4. Heat the corn tortillas (I do this by kind of toasting them in a dry non stick pan on both sides or on my flat top griddle).
  5. Spoon some of the Cilantro-Radish salad onto the tortillas. Top with a generous amount of the lobster and then drizzle with the green onion sauce. Serve immediately with avocado slices and lime wedges.
