Is anyone else still(a whole 3 days later) trying to eat a little healthier?
Between the long Holiday weekend and me desperately trying not to give into every single culinary temptation here in New York (and there are a lot of them!) “healthy” is the name of the game this week.
I thought I would work out here and be walking non-stop right away, but it was as though I somehow just glossed right over the kids in that little day dream scenario. And the fact that Coco says her legs will fall off after 1 block isn’t helping anything. Therefore, I am just taking cabs back and forth from their camps and classes all day long. I need to figure out the subway system asap. For the hundred times I have been here, I have only taken the subway a few times and with people who knew what was happening.
Since there isn’t enough walking and exercising happening, the eating (um, outside all of the tacos I have been shoveling in) has been pretty healthy. And I f I was at home this week, I would be making dishes like this one.
A sweet blueberry honey glaze on a tender piece of salmon is delectable as is. I also like to serve it with this awesome carrot salad (just minus the chicken) and you have an entire incredible meal. Enjoy!
Recipe: Blueberry Honey Glazed Salmon
Ingredients
- 1 pound salmon filet (about four 4 ounces portions)
- Blueberry Honey Glaze
- 1 cup fresh blueberries
- 2 garlic cloves
- 3 tablespoons honey
- 3 tablespoons olive oil
- 2 tablespoons rice wine vinegar
- kosher salt
- optional: This Carrot Salad (minus the chicken)
Instructions
- Preheat the grill to medium high.
- In the jar of a blender, combine all of the blueberry honey glaze componenets until smooth.
- On a sheet pan covered in foil, set the filets directly on the foil.
- Generously Glaze the salmon filets with the sauce and set the rest of the sauce aside.
- Place the sheet of foil with the glazed salmon filets directly onto the grill. Cook the salmon for 10-12 minutes or until the fish is just barely cooked through. Add a bit more sauce to the tops of the filets as the blueberry glaze can turn a bit of a greyish color (not pretty).
- I served the fish with this carrot salad (minus the chicken) and extra sauce on the side.

I adore salmon, especially in the summer, but I always ending up doing the same handful of ways. I absolute LOVE the glaze here, so vibrant, beautiful and different!
