Happy #ToastyTuesday!

I’m sorry- I know it’s corny, but it makes me smile.

This is my second consecutive not-really-a-recipe-but-its-just-something-good-on-toast Tuesday.

Peanut Butter and Berry Toast

And honestly, this is the least like a recipe of any of the toast ideas I will be sharing with you, but it just doesn’t make it nay less good. Pia is allergic to peanut butter- but not anaphylactic, and not by exposure, so Coco and I are still free to enjoy it. And it just so happens that it is one of Cocos favorite things on earth. When she is not busy carrying around enormous peanut butter spoons with a peanut butter goatee, then she is slapping it on a peanut butter and jelly sandwich or on toast. This happens pretty much every day.

I just thought that there had to be some tasty alternative to jam to spread on that peanut butter toast. Not that jam isn’t as tasty as it comes, but just something a little different.

The answer came when I took Coco to harvest some of our sprawling vegetable and fruit garden. The berries are ripening and producing prolifically this year with the extreme heat and we can barely keep up! We also planted those no thorn raspberry bushes this year, so the children can pick them without fear of being stabbed. My very favorite are the white alpine strawberries, They are the prettiest, sweetest thing I have ever seen. So basically, I brought a bowl of these berries in and sprinkled them all over the toast. When that still didn’t seem to be quite enough, I generously drizzled honey over the top. Yup. That did the job. So good. SOOOOO good! Please try this dressed up PBJ ☺

Ingredients

  • 2 pieces toast
  • 4 tablespoons peanut butter
  • mixed berries, sliced when needed
  • honey

Instructions

  1. Spread the peanut butter over the hot toast and sprinkle with berries and drizzle with honey. Enjoy!
