We are a week today from school starting for my kids, but I am trying to gear up for the structure and healthiness that comes with the starting school year starting yesterday. I do well with structure. My kids do well with structure. And while there is something wonderful about how loosey goosey Summer is- I am craving the tight schedule and the clear focused days to be honest with you. When you are a creative brain such as myself, sometimes rules and regulations (at least on your time) help to reign in the more eccentric parts of my mind.
So I am thinking about meal planning (I always think I am going to do it, and this year I am making a real run at it!!) lunches, snacks, weekday breakfasts. All that kind of school stuff. That is where Toasty Tuesday is going to come to the rescue again. I made Cashew Butter Elvis Presley Toast. (you know an Elvis Presley is peanut butter banana and bacon? )And this is really exciting to me. Also, I would totally give this to my kids for breakfast before school.
Plus, I would eat it as the best snack ever. Because, I hate to sound like a lush, but two days later I am just starting to recover from the collective hangover of my long weekend. (I mean, I guess that is what happens when you drink that much pink wine in such a short amount of days.) Not that I regret it. I just need a lot of snacks and caffeine to get me through. Snacks like this amazing toast.
I love the creamy cashew butter (which I swapped out for the normal peanut butter in this kind of combo) with sweet bananas and salty bacon and then a sprinkle f toasted cashews and a drizzle of honey make for pretty much the most perfect piece of toast ever. Ever. Enjoy!
Recipe: Cashew Butter Elvis Presley Toast- Gluten Free
Ingredients
- 2 pieces gluten free toast
- 4 tablespoons cashew butter
- 1 banana, sliced
- 2 slices crispy bacon
- 1 tablespoon chopped toasted cashews
- honey
Instructions
- Spread the two pieces of toast with equal amounts of cashew butter. Top with banan slices and 1 piece of crispy bacon on each piece of toast. Sprinkle with the cashews and then drizzle with honey.
