I know that school has started for most of you and that means back to that school lunch grind and also the pressure of week morning breakfast. I always want to make sure that my kids get a really good breakfast before they head out for the school day, and to make sure that they won’t be hungry mid morning. Peaches and Cream Oatmeal

Oatmeal has always been a great way to do that. It is super filling and full of fiber and best thing about it- my kids like it!! Plus we still have the most incredible crops of peaches rolling into Washington, and I just had to add some of the gorgeous white variety for flavor and because the color of them is just so lovely. They are cooked into the actual oats along with coconut milk which give the most flavorful rich and creamy texture and sweet taste. Peaches and Cream Oatmeal

Plus the super fresh and juicy chopped peaches that I topped the breakfast bowl with make it even more delicious and peachy. The drizzle of honey (or agave) is the sweet crowning touch. I hope you make a bowl for yourself or your kids and enjoy! Peaches and Cream Oatmeal

 

Recipe: Peaches and Cream Oatmeal Breakfast Bowl

Ingredients

  • 1 ½ cups coconut milk
  • ¼ cup coconut or beet sugar
  • pinch of kosher salt
  • 1 ¼ cup of fresh peach cut into bite sized pieces
  • 1 cup gluten free oats
  • honey or agave for drizzling (optional)

Instructions

  1. In a small pot over medium heat add the coconut milk, sugar, salt and 1 cup of the chopped peaches. Bring to a simmer and stir to dissolve the sugar.
  2. Add the oatmeal and reduce the heat to medium low. Stir often and cook the oatmeal for about 10 minutes until the oats are tender and the liquid has cooked down.
  3. Transfer the oats to a bowl and garnish with the fresh chopped peaches and add a drizzle of honey or agave.
