Hi guys! I am in New York all week for work and wooooahhhh what a circus it is! Fashion Week is in full swing and I have been having alllll kinds of star sightings. They range from the jaw dropping to the plain craaaaazy. Sorry for all of the extra letters in these words- but there is no other way to explain it. You also have to get passed 200 teen fans and paparazzi to get a cab outside the hotel. I can’t imagine how people live like this!
The good news is that there is fantastic people watching on levels I have never experienced before (except for maybe in Las Vegas). Also, I have to admit, it is like everywhere you walk in the city right now people have their game on. Like the best, most creative outfits and coolest shoes and accessories. I think everyone is just hanging out waiting to be photographed (by anyone!) I feel like I need to start dressing better.
But in the mean time lets talk breakfast!! Well, honestly, is it fair to call this breakfast? I say yes, because it is “dark chocolate”- right?! I love that little bit of sweetness with the coconut and the tart cherries- chocolate, cherry and coconut is a magical combo by the way- and I love how it dresses up oatmeal. I feel like I would also eat this if I was having some kind of dessert melt-down after dinner or in the late afternoon (because that is when my cravings hit). At least you would get some great fiber and nutrients from the oatmeal and coconut and it is super filling so this delicious breakfast bowl goes the distance!
Recipe: Chocolate Coconut and Cherry Oatmeal Breakfast Bowl
Ingredients
- 2 cups unsweetened coconut milk
- ½ teaspoon kosher salt
- 1 cup gluten free oats
- 2 tablespoons brown sugar
- ¼ cup shredded coconut
- 2 tablespoons dried cherries
- 2 tablespoons dark vegan chocolate chunks or chips
Instructions
- In a small pot over medium heat add the coconut milk and salt and bring to a simmer.
- Add the oatmeal and reduce the heat to medium low. Stir often and cook the oatmeal for about 10 minutes until the oats are tender and the liquid has cooked down.
- Stir in the brown sugar and coconut, then transfer the oats to a bowl and garnish with the cherries and chocolate.

Cherries AND chocolate? I love a good hearty breakfast bowl especially when it cools down, cherries & chocolate make it even better. Since you’re in my hometown (I remember fashion week as CRAZY crowded) may I suggest this great little Thai place in the East Village called Ngam that is insanely delicious and some of the best Thai around…we always talk to the manager and they prepare our food gluten/dairy free without any issues… have fun in NYC!

This looks super delicious. I always put coconut oil and Enjoy Life chocolate chips in my oatmeal but the addition of cherries and coconut flakes sounds divine. Enjoy your trip!
