This pudding is the weirdest thing ever. Wait- that sounds bad. It is the BEST TASTING, weirdest thing ever. How’s that?
I have seen many chocolate avocado baked good concoctions over the years, and I have to say, none of them moved me or affected me in any way except for creating a little confusion. But recently, when I had done an overkill on the avocados at the store and I couldn’t get through them all in time, I started thinking about that unusual pairing.
That, combined with a constant curiosity for recreating dishes typically made from dairy and eggs form unusual ingredients led me here. To Mint Chocolate Avocado Pudding. I started by just making regular old chocolate avocado pudding. And I liked it. The texture was shockingly amazing and the mouth feel was there thanks to the coconut and avocado fat. There is even a little jiggle wiggle to the pudding just like the real stuff! But I have to admit there was still a little avocado flavor, and I just didn’t want that. That is when I opened up my spice cabinet wondering what to add and the peppermint extract literally toppled out. I took it as a sign that I should add it (also that I should clean out my cabinet).
That hint of mint (the extract is STRONG! Use sparingly!) was the perfect thing. It took away the avocado after taste and I just love the combination of mint and chocolate. I made this about a month ago for a whole group of kids and adults and NOONE could believe what this was! Of course I didn’t tell them until after they had eaten it all and some were literally licking the bowl.
Recipe: Mint Chocolate Avocado Pudding
Ingredients
- 2 avocados
- 1/2 cup unsweetened coconut cream
- 1/3 cup unsweetened coconut milk
- ½ cup plus 2 tablespoons sugar (I used beet sugar)
- ¼ teaspoon kosher salt
- ½ cup plus 2 tablespoons Unsweetened Cocoa Powder
- 1 tablespoon vanilla
- ¼ teaspoon peppermint extract
Instructions
- In the jar of a blender combine all of the ingredients and puree on high until you have a really smooth and silky mixture. You may have to stop and scrape the blender down a few times to make sure everything is mixed together.
- Spoon the pudding into glasses or into a large Ziploc and then snip the corner and pipe it into glasses or bowls. Chill the pudding in the glasses or bowls and then serve with a garnish of fresh mint or an edible flower if desired.
