I haven’t shared a toasty Tuesday with you guys in a couple of weeks, but the toast is back!
And today we have the Ultimate Veggie Toast! Layers of toasty chewy baguette, garlicky hummus, creamy avocado, juicy tomato and a crisp hearty little salad with the bite of fresh shallot and red wine vinegar.
I also happened to see this snippit about broccoli sprouts recently and how they have more phytochemicals in a tablespoon of sprouts than in a cup of whole broccoli. (That is all the good stuff that helps protect against disease by the way). Right after I read about these little gems, I found them at the grocery store, so now I am trying to throw them on everything.
I think that all of the textures and the really tasty flavors from the homemade hummus (although totally use store bought!) make the toast amazing. I hope this finds its way to your lunch or snack plate soon!
- 2 toasted pieces baguette (I used gluten free vegan bread)
- ⅓ cup Fresh Pea Hummus (or any other hummus that you like!)
- ½ avocado, thinly sliced
- 4 tomato slices
- 1 cup curly kale finely chopped
- 3 tablespoons shredded carrots
- 2 tablespoons thinly sliced shallots
- 2 teaspoons olive oil
- 1 teaspoon red wine vinegar
- kosher salt
- 2 tablespoons broccoli sprouts
- 2 teaspoons olive oil
- Spread the hummus on the toasted bread and pile with avocado and tomatoes (sprinkle with salt).
- In a small bowl, toss the curly kale, carrots and shallots with the 2 teaspoons olive oil and 1 teaspoon red wine vinegar. Season to taste with kosher salt.
- Pile the salad on top of the tomato and add the sprouts to the very top. Drizzle each toast with 1 teaspoon olive oil.

As I get older and more mature, I start to appreciate recipes that are more nutritious. Your 30 + year old self can’t eat like your teenage self. And plus, my wife refuses to allow Spanx for men into the house. And Panera does not make enough food for a man! Great recipe.
