I am really into smoothie bowls right now. I guess I am like years late on this whole trend, but when you discover it and you love it- you gotta share it! The girls and I have been having these every morning (I take pictures of them regularly on instagram) and this one was particularly delicious. So tapioca is something I have been making a lot lately and keeping it in the fridge, and I just put a scoop in the bottom of the bowl- but that is totally optional. This recipe is coconutty and vanilla scented and totally creamy and delicious.

Then the berries are so sweet, the granola crunchy and wonderful and the coconut is the perfect texture.

This is the best breakfast (pretty too! Huh?) try one this weekend ☺

Berry Smoothie Bowl

Ingredients
  • Coconut Tapioca:
  • ½ cup tapioca
  • 3 cups unsweetened coconut milk
  • 1 teaspoon vanilla
  • pinch of salt
  • 1 tablespoon agave
  • ½ cup shredded unsweetened coconut
  • Berry Smoothie:
  • 1 banana
  • 1 ½ cup frozen mixed berries
  • 1 ½ cups unsweetened coconut milk
  • ½ cup Granola
  • 2 tablespoons unsweetened shredded coconut
  • ½ cup fresh berries
Instructions
  1. For the Tapioca:
  2. In a small pot add the tapioca pearls and the coconut milk. Let it soak for 15 minutes.
  3. Then turn the heat onto medium high and let it come to a boil. Turn the heat down to low and simmer the tapioca until it is thick, about 15 minutes. Then take the tapioca off the heat and set aside to cool. Stir the agave and the shredded coconut into the tapioca and let cool- it will firm up further.
  4. For the smoothie:
  5. Combine everything in the jar of a blender and puree until smooth.
  6. To assemble:
  7. Put some coconut tapioca in the bottom of the bowl and pour the smoothie into the bowl and top with berries, granola and sprinkle with the coconut. Serve immediately.
