You know what is amazing? Dessert for Breakfast! It’s sort of like breakfast for dinner- only a little different. It’s kind of like it’s dessert shaped, and themed, but breakfast worthy healthy!

There is creamy rich berry and banana smoothie, fresh berries and granola (remember that delicious Coconut Blueberry Almond granola from the other day?!) and all of that goodness is crammed in one perfect frozen pop!

They are pumped and feel like they got one over on me (which I am sure is always satisfying to them) but really I got one over on them (HA!) it’s really just a smoothie bowl, only about 10 times more convenient for moms (and I seriously need that right now) because you can make them whenever you have a spare 10 minutes and then you have a pretty good supply. You could make these with any kind of fruit, and without the granola (although I love the little crispy chunks in them) and coconut yoghurt or even vegan protein powder would also be a great addition to these. Enjoy!

Berry Breakfast Smoothie and Granola Pops- vegan and GF

Ingredients
  • Berry Smoothie Pops
  • 1 ½ cups frozen berries
  • 1 banana
  • ⅓ cup fresh berries
  • 1 ½ cups coconut or almond milk
  • ½ cup granola
Instructions
  1. In a popsicle mold (mine has 12 popsicles places) layer the smoothie (first) then the berries then smoothie, then granola then more smoothie. At the end gently tap the popsicle mold so that the air bubbles pop and the smoothie fills in the air pockets. You may need to top off the smoothie after the air bubbles are popped. Put popsicle sticks in and stick them in the freezer for at least a few hours until totally frozen.
  2. Run a little hot water over the outside of the popsicle mold to spring them free and serve immediately!
