As you guys know, I am married to a certain Greek man that absolutely loves lamb and he always gets so excited when I get the opportunity to work with Superior Farms Lamb, (like when I made this Honey Pumpkin Seed Crusted Rack of Lamb with Arugula Pesto) because their lamb really is, well, superior.

In the middle of summer, I am mostly thinking about what I can grill right now. It makes things so much easier and I loooove the no dishes part- you too? Plus that grill flavor adds an amazing element to a really tender well marinated lamb skewer accented with charred red onions- It is the most delicious combination! Plus the whole skewer element makes preparing the lamb so easy- it is really straightforward and simple to cook perfectly.

I served mine on a bed of simple quinoa and then topped it with Village Salad- Pete’s other favorite. I just added a little addition of toasted slivered almonds which I enjoyed for the toasty crunch. The rich and flavorful lamb is a great contrast to the bright fresh crunchy salad- you really can’t go wrong. This is an amazing week night dinner but would also be fantastic for serving to guests. Grilled Greek Lamb Skewers with Village Salad

Ingredients
  • Greek Lamb Skewers:
  • 1 pound Superior Farms lamb, shoulder or leg
  • 4 cloves garlic, minced
  • 1 lemon zested and juice
  • 1 tablespoon dried oregano
  • 2 teaspoons kosher salt
  • ¼ cup olive oil
  • thick cut red onion rounds
  • Village Salad:
  • 1 cup chopped Persian cucumber
  • 1 cup chopped seeded bell pepper
  • 1 cup halved cherry tomatoes
  • ½ red onions, thinly sliced in rounds
  • ¼ cup kalamata olives, pitted
  • 1 tablespoon fresh oregano leaves
  • 2 tablespoons toasted slivered almonds
  • 3 tablespoons olive oil
  • 2 tablespoons red wine vinegar
  • kosher salt
  • Quinoa Salad (Optional)
Instructions
  1. In a medium bowl combine the garlic, lemon zest and juice, dried oregano, kosher salt and olive oil.
  2. Cut the lamb into large chunks and add it to the bowl. Stir the lamb into the marinade and marinate it for at least 30 minutes and up to all day.
  3. To make the Village Salad: Combine the cucumber, bell pepper, cherry tomatoes, red onion, olives, oregano, almonds, olive oil, red wine vinegar and kosher salt to taste.
  4. Preheat the grill to medium heat.
  5. Skew the lamb, alternating chunks of lamb and pieces of red onion.
  6. Grill the lamb, and cook 3-4 minutes on each side, turning 3 times- total cooking time about 9-10 minutes. Let the lamb skewers rest for a few minutes before serving.
  7. I serve the lamb skewers over a bed of quinoa and Village Salad.
