What a nice weekend. I had a 15 year college reunion with old friends on Friday and then went to a birthday party on Saturday night, and then Pete and I had a Godfather bender on Sunday. Nothing but the best.

So before I take off for the nuttiest week, I wanted to be sure to share the most wonderful salad with you. Grilled Chicken, Beet and Cherry Salad with Honey Balsamic Dressing. When I saw the colors of these cherries and cherry tomatoes and beets together, I was absolutely blown away and knew that they had to meld together to create a jaw dropping, eye-popping salad that would knock your socks off!

Grilled Chicken, Beet and Cherry Salad with Honey Balsamic Dressing

Ingredients
  • Grilled Chicken:
  • 2 thinly cut chicken breasts
  • 1 tablespoon olive oil
  • kosher salt
  • Salad:
  • 1 large Romaine head, shredded
  • 3 large beets, boiled and sliced into wedges
  • ¼ red onion, thinly sliced
  • ⅔ cup cherry tomatoes, halved
  • ⅔ cup pitted, halved cherries
  • Honey Balsamic Dressing:
  • 1 clove garlic, minced
  • 1 tablespoon honey
  • 3 tablespoons balsamic vinegar
  • ¼ cup olive oil
  • kosher salt
Instructions
  1. Preheat the grill to medium. Rub the chicken breasts with olive oil and sprinkle them with kosher salt. Grill them about 2-3 minutes on each side or until just cooked through- set aside to rest.
  2. In a large bowl or platter arrange the romaine and add the beets, red onion, cherry tomatoes and cherries. Top with sliced grilled chicken.
  3. In a small bowl, whisk together the dressing and season to taste with kosher salt. Drizzle the dressing over the chicken and the salad and serve immediately.
