I know I mentioned our plum tree which is crippled over with plums and broken boughs because of how heavy the fruit was and now I am just plum happy- every recipe has to have plums in it. These BBQ ribs included.

But you will be happy I went this route, because it turns out that plums make an amazing BBQ sauce and a great compliment to spicy flavors. It also happened to be a really pretty color.

You just bake your seasoned ribs in beer to get started (so that they will be nice and tender!)

Sweet and Spicy Plum Serrano BBQ Ribs

Ingredients
  • 2 ½ pounds Pork Ribs
  • 2 teaspoons kosher salt
  • 1 twelve-ounce gluten free beer
  • Plum Serrano BBQ Sauce, makes 3 cups
  • ¼ cup olive oil
  • 1 large red onion, roughly chopped
  • 3 cloves garlic
  • 1-2 serrano chili’s, rough chopped (depending how spicy you like it)
  • 2½ cups chopped plums
  • 1 cup water
  • ¼ cup rice wine vinegar
  • 3 tablespoons pure maple syrup
  • kosher salt
  • Sliced Serrano chili’s, Sweet and Spicy Pickled Red Onions and sliced plums for garnish if desired.
Instructions
  1. Preheat the oven to 375 degrees. Place the pork ribs in a baking dish and sprinkle them generously with kosher salt. Add the beer to the bottom of the dish and then bake the ribs for 1 ½ hours.
  2. In a medium saucepan over medium heat add the oil, and then the red onions, garlic cloves and chili, frying them until golden and tender about 10 minutes. Add the plums and 1 cup of water, deglazing the pan. Simmer over low heat for 20 minutes until the plums are very soft.
  3. Transfer the contents of the saucepan to a blender and puree until smooth. Add the rice wine vinegar and maple syrup and puree- season to taste with kosher salt and then set aside.
  4. When the ribs are done baking preheat the BBQ to medium high. Slather the ribs with about 1 cup of the sauce and then grill for 6-7 minutes, meat side down until the ribs are hot and the sauce has caramelized on the pork.
  5. Pull the ribs off the grill and let them rest for 5 minutes. Slice them and serve with extra sauce for dunking.
