Happy Thirsty Thursday!
I am sipping one of these as my freshly turned 9 year old tells me her entire life that she has already planned out. From the Olympics to college and vet school and then the details of the rest of her life. Very specific details on her job (a mixed species vet clinic and surgery center), who she will marry (a “handsome” fencer or another Veterinarian), how many kids she will have (at least two) and the pets (2 big horses, 2 mini horses, a pig or two, quite a few dogs and a rabbit)- the whole nine yards. She will live on 5 acres on Whidbey Island with waterfront (I hope that Vet clinic does well). She is so funny you guys- knowing this child she will probably do just that….
Then Coco told me- “I’m not going to college- I’m going to Hollywood” so there you go…
Just thinking about either child growing up or ever leaving me is driving me to drink Fig Martini’s tonight.
Join me for one of these gorgeous lemony, figgy vodka martinis, you won’t be sad you did!
- 1 cup chopped purple figs
- ½ cup sugar
- ½ cup water
- ¼ cup fresh lemon juice
- 2 tablespoons cold water
- 3 ounces chilled vodka
- ice
- Fresh sliced Figs for garnish
- For the Fig Simple Syrup: Bring the chopped figs, sugar and water to a simmer and cook for 5 minutes over low heat. Let the mixture rest while it cools, about 30 minutes.
- Add the combination to the blender and puree, then strain the mixture reserving the pink syrup.
- Add 3 tablespoons of the simple syrup, the lemon juice, the water and the cold vodka to a cocktail shaker filed with ice. Shake vigorously and then pour into cocktail glasses. Garnish with sliced figs and serve immediately.

I love the idea of adding figs to a martini! Figs are so cheap here in Denmark right now, so I need to try this next time I’m craving an extravagant cocktail 🙂

I’d like to serve this drink to my Girls tonight but I have difficulties in understanding the amount of each ingredient for one glass. Is it 3 tablespoons of each ingredient for cocktail?

Hi Lisa-Katherina! I’m sorry I just saw this, it was 3 tablespoons of simple syrup for 2 drinks. SO the recipe makes 2 cocktails per batch! Merry Christmas!
This recipe makes no sense, it says to add 1/2 cup of water to the simple syrup recipe, then to make the drink it says to add “the water” but doesn’t say how much to the drink mixture!!! I’m still making it !! ok so I made the recipe and it turned out pretty good. I just added “some” water to the shaker!!! Happy Labor Day Folks:)
