Every now and again Pete and I like to just skip town with a few days notice. My family is with the kids and we are in VEGAS!!! I know, I am sure that you are thinking “who in their right mind goes to Vegas in August???” We do.

I will tell you what, due to a crazy heat wave, it is almost as hot in Seattle as it is in Vegas- only we have humidity in Seattle (As well as a serious short of air conditioning!) PLUS there are terrible forest fires in the Northwest that have the smoke so thick even in the city, that we can’t keep the doors and windows open. Sooooo, we turned on the AC at the house for the kids and my fam and took off for Vegas!

A little spa time, some unbelievable food, shopping, and if you have been here over the years then you will know that I really like to gamble- lol! So Cheers to you and the weekend with these Black and Blue Berry Vodka Fizz’s!! Use up some of the amazing blue and blackberries that are in season and make this gorgeous purple cocktails. But these are also fantastic as cocktails (I have made them for the girls several times now!) I like to use Izze soda since it doesn’t have a bunch of added sugar. Enjoy!

Black and Blue Berry Vodka Fizz

Ingredients
  • 6 tablespoons Blueberry Syrup (recipe below)
  • 4 ounces vodka
  • ¼ cup fresh lemon juice
  • Chilled natural blackberry soda (I used IZZE)
  • Ice
  • Blueberry Syrup:
  • 1 cup water
  • 3 tablespoons sugar
  • ½ cup blueberries
Instructions
  1. For the Blueberry Syrup:
  2. Simmer everything together in a small pan over medium heat for about 5 minutes or until the blueberries have gotten plump and soft and released their juices- smash them up a bit with a fork. Transfer to a bowl or mason jar and refrigerate.
  3. Fill two glasses with ice. Split between the two glasses the blueberry syrup, vodka and lemon juice. Then top off the drinks with chilled natural blackberry soda. I like to garnish with fresh blackberries and blueberries.
