NEW VIDEO!!! It’s Thanksgiving week and the kids are out of school and itching for awesome breakfasts or even breakfast for dinner! And waffles are everyone’s favorite breakfast lately and are definitely calling my name!
Specifically, lightly spiced Pumpkin Waffles and topped with a river of rich, tender pears and caramel sauce. And when you eat them, basically your eye’s roll back in your head because the whole delicious thing is just so over the top amazing.
EXACTLY what you need for breakfast on Thanksgiving or at any point between now and then!

- Pumpkin Waffles:
- 1 cup unsweetened coconut milk (from a carton)
- 1 tablespoon apple cider vinegar
- 2 cups gluten free all-purpose flour (I used Bobs Red Mill Flour)
- ¼ cup sugar (I used organic beet sugar)
- 2 teaspoons baking powder
- 2 teaspoons cinnamon
- ½ teaspoon nutmeg
- 1 teaspoon kosher salt
- ¼ cup coconut oil, melted
- ½ cup canned unsweetened pumpkin
- ½ cup beer (I used gluten free beer)
- Caramelized Pears:
- 1 cup unsweetened coconut cream
- 1 cup brown sugar (I used beet sugar)
- 2 teaspoons pure vanilla extract
- ½ teaspoon kosher salt
- 2 pears, thinly sliced
- Preheat a waffle iron.
- In a small bowl combine the unsweetened coconut milk and the vinegar and set aside.
- Meanwhile you are going to combine the flour, sugar, cinnamon, nutmeg, baking powder and kosher salt and whisk them together. Stir in the melted oil, pumpkin and coconut milk/vinegar mixture and the beer and stir until you have a smooth thick batter. Set aside while you make the caramel.
- For the Caramelized Pears:
- In a medium saucepan, combine the coconut cream, brown sugar, vanilla and salt. Whisk together and let simmer over medium-low heat for about 8-10 minutes until golden and thickened. Add the pears and coat them with the caramel and allow everything to simmer for a few more minutes.
- While the pears are cooking in the caramel pour the first waffle into the iron. Cook until you have a golden crispy waffle and then top it with hot caramelized pears and caramel sauce and serve immediately. Repeat with the remaining waffle batter- you should get 6 waffles with pears and sauce.

I would love to try these waffles, but do not use any form of alcohol. What would you recommend to replace the beer in this recipe? Also, I find it odd that you are so wonderfully into eating healthy food, yet mention drinking alcohol so often… hmm.
Alice, I think a good substitute in this case would be ginger ale? or a sparkling apple cider? I was joking about the Tequila- I just had a long week. Cocktails are in moderation around here, and I have no problem having drinks or wine during the week when I exercise almost every day and eat a pretty exceptional diet. These looked delicious so I tried the recipe, but they stuck to the waffle iron even after lathering with coconut oil. Not sure if adding an egg would help… Any thoughts?
Hi Sandy! I am so sorry that happened. What is your waffle iron like? I am assuming you don’t normally have this problem with other waffle recipe you have made? I have one with a non-stick surface (All-clad) and I have never had a problem? I just spray lightly with coconut oil and then pull off with a fork. I am not sure how to trouble shoot this- but I am going to make these real time on Facebook live this week on Wednesday or Thursday if you want to tune in and see if there is something that feels different than what you did. These are so good- I would love for you to be able to have a successful batch with no sticking.
