I hope that you are having a lovely week and are fully submerged in the Christmas Spirit! I know that I have been trying to work less and imbibe more. I have also been gift wrapping, Christmas shopping, eating everything, baking cookies and spending quality time with Pia and Coco are taking up every waking moment!
So at the end of the day, I have found a really lovely way to unwind if I do say so myself!
Affogato and Tequila. I know that this may surprise you, but trust me on this one!!
If you know me in real life, you know I LOVE tequila. Especially a really great sipping tequila- that is my favorite! Pete and I will often pour a shot of good tequila while we watch a movie or play games with the girls and sip it- it’s delicious and relaxing!
So in the spirit of “Imbibe more” over the holidays, I am pairing my favorite sipping tequila (Casamigos Anejo Tequila) with a very complimentary dessert: Affogato.
And I make affogato vegan- so I use a generous couple of scoops of vegan vanilla ice cream and then drizzle it with homemade vegan caramel (yum!) and then top with a shot of hot espresso. So good, trust me on this!!
Also, keep in mind that this is an incredibly easy way to entertain. Sometimes making dessert for a crowd is the last thing you want to worry about. With this, you can buy the ice cream, make the caramel up to a few days ahead of time and then just make some really strong coffee or espresso at the last minute- BOOM! Dessert for a crowd! Paired with aged tequila- it’s a perfect pairing!
- Affogato:
- Vegan Vanilla Ice Cream
- Vegan Caramel:
- 1 cup brown sugar
- 1 cup unsweetened canned coconut cream
- 1 tablespoon vanilla
- 1 teaspoon kosher salt
- Espresso
- Vegan Caramel:
- In a saucepan, combine all of the ingredients and whisk together over medium heat. Let the caramel simmer over medium heat for 6-8 minutes until it coats the back of a spoon. Remove from the heat and pour into a mason jar or heat proof container and let cool.
- Scoop vanilla ice cream into a cup and then drizzle with caramel and pour a hot shot of espresso over the top. Serve immediately.
