Oh hi. I am busy enjoying an epic span of weather here in Seattle (like it’s in the 80’s through the weekend!!!!) and thought that I should share this with you ASAP in case you wanted to get your mom and family all boozed up this weekend!

It is just so pretty and fresh and reminiscent of that weird fluorescent red fruit punch of childhood, but so much better.
But this version is prettier. And also boozier. So there is that!
I use strawberries, pineapple and frozen fruit, because otherwise it gets a little crazy expensive. But I did use some more special and exotic fruit for the garnish (starfruit!!!) and then the star of the show is the red dragon fruit that makes the whole bowl bright, bright pink that is so pretty!
And of course- feel free to adjust the amount of vodka and sugar to taste- everyone has their own version of the perfect fruit punch!
- Dragon Fruit Syrup:
- 1 red dragon fruit- about a cup of chopped fruit
- 1 cup sugar
- 1 cup water
- Fruit Punch:
- 6 cups of fresh fruit chunks (I used strawberries, pineapple and some frozen cherries and raspberries)
- 4 cups of pineapple juice or orange juice (or another fruit juice you like)
- ½ cup fresh lime juice
- 2 liters club soda, chilled
- 3 cups Vodka (or to taste)
- Fresh fruit to garnish- I used orange slices, starfruit, dragonfruit, strawberries, raspberries and pomegranate seeds
- For the Dragon Fruit Syrup:
- In a small saucepan combine the dragon fruit, sugar and water and simmer for 5 minutes until the sugar has dissolved and the water has turned bright pink. Transfer to the jar of a blender and puree on high. Add the fresh fruit chunks to the blender (or do it in two batches) with some of the juice and puree on high until smooth.
- For the Punch:
- In a punchbowl filled with ice, add 3 cups of vodka and then add the fruit puree and the remaining fruit juice and lime juice and mix well. Add the chilled club soda and mix well. Add the fruit garnishes and serve. Alternatively, you could make the mix and refrigerate and then add the ice and club soda right before serving.

I can’t wait to try this. My mouth started salivating by seeing this only. Cookies are my favorite and any type of cakes is great for me. I love to try different types of cakes and this is kind of different one which I haven’t tried yet. So I’m definitely going to try this soon and will definitely let you know, how it turned out.
