I remember seeing Jessica of How Sweet Eats post her “House Salad” a few years ago and I absolutely LOVED the idea and have been meaning to share my own for ages!
I know that this is so easy, but I still feel like anything that I am eating more than once a week consistently for months and months or years even, deserves sharing!
This salad is delicious on its own, but it is obviously pretty flexible. You could add some chopped cucumber, or top with roasted pumpkin seeds, a sprinkle of the Trader Joes Everything Bagel Mix, or even add shredded chicken or grilled shrimp to make it a full meal. However, I tend to eat so much of it that it is really a meal in itself if you are me.
I hope you try this and let me know what you think and how you mix things up to create your own version!
- For the Salad:
- 3 heads romaine hearts, finely shredded
- 6 radishes, chopped
- ¼ cup red onion, finely chopped
- ½ cup cherry tomatoes, halved
- 1 avocado sliced
- ⅓ cup gluten-free croutons (gluten-free breadcrumbs, baked or pan toasted in olive oil until golden
- House Vinaigrette:
- 2 cloves garlic, minced
- 2 tablespoons tahini
- 1 tablespoon dijon mustard
- 1 tablespoon maple syrup
- ½ teaspoon smoked paprika
- ½ teaspoon kosher salt
- ¼ cup red wine vinegar
- ½ cup extra virgin olive oil
- In a large bowl or on a platter pile the shredded romaine, radish, red onions, cherry tomatoes and avocado slices.
- In a bowl, whisk together all of the vinaigrette ingredients until smooth and then drizzle the vinaigrette over the salad.
- Top with the croutons and serve immediately.
I have a pinterest board for salads and this is going on… about 95% of the board are your salads which are always the best. Can’t wait to try this one for a summer dinner salad.
Look forward to trying this dressing out. Might be a new summer favorite!
The dressing is amazing- made it for the second time and tripled the amount so I have it ready to go. Making a great cold lunch salad of chopped spinach, buckwheat noodles, blueberries, chopped cauliflower, chopped jalapeños, little bit of chopped mint – delicious. Thank you for adding a little kick to my lunch.
Love this! Thank yoU!
