Happy Thirsty Thursday! Sorry I have been so MIA! I was in LA with Coco for the American Radio Disney Awards- if you missed my hilarious insta-stories- check out her cute little Instagram to see her (she was so nervous!)

Anyways, I am just enjoying the slightly easier pace of summer right now. We don’t have to get up quite as early, and in Seattle it light SO late and the sun is rising SO early! (We are looking at about 7 hours of darkness right now)- so that is leaving lots of time for staying up late and enjoying myself with a cocktail!

And I am actually heading off to a nice Mexican vacation very soon, so I definitely have margaritas on the brain and had to deliver to you a rather simple but magical version. Fresh orange and lime juice make for an extra refreshing margarita that gets a little heat from a jalapeno simple syrup that is the perfect combo of sweet and spice!

So don’t mind me, I will just be off sipping on these while eating the complimentary Spicy Orange Brisket Tacos with a huge grin on my face and a side of guacamole 🙂 you let me know if you need anything, ok?

Spicy Orange Margaritas

Ingredients
  • For the Spicy Orange Margaritas:
  • 1 cup fresh orange juice
  • ½ cup Fresh Lime juice
  • ½ cup Tequila Blanco
  • ¼ cup Cointreau
  • 2-4 tablespoons Jalapeno Simple Syrup (depending on how sweet you like it)
  • Ice
  • For the Jalapeno Simple Syrup, makes 11/2 cups:
  • 1 cup Sugar
  • 1 cup water
  • 2 jalapeno peppers, minced
Instructions
  1. For the Jalapeno Simple Syrup:
  2. Combine the sugar and water in a small pot and bring to a brief boil over medium heat.
  3. Transfer the syrup to a blender and add the jalapenos. Blend until smooth. Transfer to an airtight container or mason jar. Refrigerate for up to 1 week.
  4. To make the drink, combine ice, the jalapeno simple syrup, the orange and lime juice and the tequila and Cointreau in a cocktail shaker. Shake vigorously and then pour into a chilled ice filled glass. Garnish with fresh orange slices.
