We will have been completely away from other people for 2 weeks tomorrow. I know that each of us are going through something different in this very difficult situation. I can’t even pretend to say that we are all on the same page. Every household, every relationship is in a new, never seen before spot. All I can say is be gentle- with yourself, with your loved ones. Does it really matter if the house is kind of messy? If you have a mountain of unfolded laundry like I showed on instagram the other night? Does it matter if you didn’t work out? Does it matter if you suck at homeschooling your kids and can’t remember how to divide fractions? Does it matter if you have been having dessert every night, and sometimes in the afternoon? No. I’m pretty sure it doesn’t. Plus since I am only wearing stretch pants, I’m not going to worry about it right now. At least, that’s how I am deciding to deal with all of this.

Pia’s walking pneumonia is having a flare up three weeks after her antibiotics finished. Obviously that is unfortunate and what you don’t want in the time of Corona is to have a daughter with all the symptoms of Corona. Fever, coughing. Good thing we are not going out in the world. Her dr. is doing a tele-appointment with her and I am hoping he has some good ideas about how to get rid of this dang infection. The stress is making me tired. Being trapped in the house is making me tired. I listened to Andrew Cuomo speak this morning, and he said something that struck home with me. (and this is abbreviated): “When I think I’m tired, I think about the first responders, the dr’s, the nurses, the grocery store workers, the pharmacists, the transportation workers, the healthcare workers. Those people are tired.” I am not tired.

Sooooo…… I guess I will go bake some more, LOL. What else is there to do? Drink wine and do my puzzle- that’s my other go-to right now 🙂

Let me share these Tahini Brownies that I made almost two weeks ago (woahhhh the time is going by weirdly fast.) These are made with all pantry ingredients and are just wonderfully delicious and quite beautiful. I hope you like this twist on classic brownies.

Tahini Brownies (Vegan and Gluten-free)

Ingredients
  • Tahini Brownies:
  • 2 cups all purpose gluten free flour (I use Bobs Red Mill all-purpose gluten free flour)
  • 1 ½ cups sugar (I use non GMO beet sugar)
  • ⅓ cup unsweetened dark cocoa powder (I used Hersheys)
  • 2 teaspoons kosher salt
  • ½ cup coconut oil
  • ½ cup sweet potato puree (i used canned- you could also use canned pumpkin)
  • ⅓ cup brewed strong coffee
  • ½ cup vegan chocolate chips
  • ⅓ cup tahini
  • 1 tablespoon toasted sesame seeds
  • Glaze:
  • 1 cup powdered sugar
  • 1 tablespoons coffee
  • 2 teaspoons vanilla
Instructions
  1. Preheat the oven to 325 degrees. Prepare a quarter sheetpan with sides (like a jellyroll pan or a quarter sheetpan) 9x12 with parchment paper and coconut oil spray.
  2. In the bowl of a standing mixer fitted with a whisk attachment, combine the flour, sugar, cocoa powder and salt. With the mixer running on low, add the oil, sweet potato or pumpkin puree and strong coffee. Transfer the batter to the prepared pan and sprinkle the top of the brownie batter with the chocolate chips and little spoonfuls of tahini spread out over the top of the batter. Sprinkle the sesame seeds on top and bake at 325 degrees for 25 minutes. Let the brownies cool.
  3. While the Brownies are baking, make the glaze by whisking together until smooth.
  4. Cut the brownies into desired sizes and then drizzle the glaze on top of each one and sprinkle with pomegranate seeds if desired!
